Featured Recipe from Ellie Krieger: Whole-Grain Rotini with Tuscan Kale

Turn a kale salad into an entrée by adding whole-grain pasta. Tossing the pasta with the kale softens the vegetable enough, while it retains a toothsome freshness.

Serves 6

Ingredients
  • 1 pound whole-grain rotini or fusilli
  • 1/3 cup pine nuts
  • 3 tablespoons extra-virgin olive oil
  • 2 large garlic cloves, thinly slices
  • 1 bunch (¾ pound) lacinato (aka Tuscan) kale or tender regular kale, stems and center ribs discarded
  • 2 tablespoons red wine vinegar
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper, plus more to taste
  • ¼ cup Parmesan cheese
Directions

1. Bring a large pot of water to a boil. Add the pasta and cook according to the directions on the package.

2. Meanwhile, toast the nuts in a small dry skillet over a medium-high heat, stirring frequently, until golden brown and fragrant, about 3 minutes. Transfer the nuts to a small dish. Put the oil and the garlic in the same skillet and heat over a medium-low heat until the garlic is just golden, about 3 minutes. Remove from the heat.

3. Slice the kale leaves very thin and place them in a large bowl. When the pasta is done, drain it, and, while it’s still hot, add to the kale along with the garlic and oil, vinegar, pine nuts, salt, pepper, and Parmesan cheese. Toss well to combine. Serve warm or at room temperature.

I've always been a fan of Ellie's, because her food is sensible and family friendly. I recently read this revised edition and it really clicked for me this time! Once I started really paying attention to the number of veggies and fruits I was NOT eating everyday, I made the decision to improve my family's diet for good. In 2 weeks times, just from cutting out the junk food and eating healthy snacks, I lost 3 lbs effortlessly! That's motivation enough, but I also feel better and have more energy, because I'm fueling my body with upgraded fuel!

I refuse to do the goofy "no carb" and "no fat" diets, because they just aren't sustainable. I don't want to live that way! BUT, I have finally had my "aha" moment when I realized that I simply can't eat like a 20 yr old anymore. I have to eat LESS carbs, healthier fats, and a lot less junk. I still have my dose of chocolate everyday...but these days it's usually a couple of squares of dark chocolate, and it satisfies me.

This book is full of common sense, good recipes, and motivational tips on how to improve diet and lifestyle. I will refer to it often. Sometimes you just need a good coach to help you remember WHY you want to live a healthier lifestyle, and Ellie is just that!

This book is the best of both worlds it has interesting and healthy recipes also a exercising, feel good about yourself plan , which is what makes it amazing ,recipes on what to eat to stay healthy and exercise,it is not your ordinary cook book which makes it great !!! WE NEED MORE LIKE THIS !!!!!

I thoroughly enjoyed and appreciated the updated version of Ellie's book. The new recipes are delicious-- I've made the kale chips and the Tilapia with Greek-Style Herb Sauce has become a family favorite (for my kids too!). I also enjoyed the updates on topics like agave, gluten free, and coconut oil.

I gave this book to my mother for her birthday as she loves to live a healthy yet delicious lifestyle. She loved it!!! We have made several recipes from the book. My personal favorite is the Whole-Grain Rotini with Tuscan Kale. We make this dish about once a month - absolutely amazing, perfect with a glass of red wine. I look forward to more books from Ellie as all of her recipes are right up my alley: simple, tasty and most importantly, healthy.

I love that this book includes wellness tips that really back up the recipes. So often I see a healthy recipe being made on TV or online and have every intention of making it for myself, but then I don't because I am worried it wont taste good or basically, because I get lazy. The wellness and exercise tips really reinforce the recipes Ellie provides - they give you that extra "oomph" of motivation to get healthy in EVERY category of your lifestyle. I'm halfway through the plan and not only have I lose weight, I have already learned so many ways to incorporate veggies into my meals (something I was not very good at before...) and really simple, attainable changes that I can make in terms of exercise and relaxation that actually fit within my jam-packed work week.
You really can't fail at this wellness program. It isn't a diet where you have to spend a ton of money or eat the same thing every single day, or buy a particular supplement or pill. It's easy and tasty - a really great combo if you ask me.

I have always loved Ellie's recipes. So when I picked up this book I knew I would love it from the beginning. It is so much more than just a recipe book, it is a 12 week program that really shows you how to live a healthy life. I LOVED the Pita Pizzas, so delicious! I will be getting this for my mother for mother's day. Recommend this book to all, super helpful and always great, as expected from Ellie.
