This is a tremendous collection of yummy ways to eat veggies especially when you tire of salads! I would have given this a five stars excel as far as I can see, there is no table of contents with hotlinks to the recipes, so it's hard to move around between the recipes. Other than that, fantastic effort, Carrie. Thanks so much!

I decided I needed to increase my vegetable consumption, so I bought this book for the vegetable recipes. I've ended up making more smoothies. Everyone of them are delicious! I've liked every vegetable recipe I've tried. I can't say why but they are all even better the second day.

This is a pricey Kindle book for the small number of recipes that you get. If you buy Carrie's other book, then you will quickly see that she has copied and pasted some sections of the book from one to the other. I've made a number of the smoothies and some of the vegetable dishes and so far, I find them bland and disappointing. For instance, I made the spinach dish last night that Carrie raves about and my family found it tasteless. (I weighed and measured ingredients carefully and followed the instructions to the letter.) The range of vegetables in her dishes is also quite limited. She admits in the book that she doesn't like spicy food, which makes me wonder if she thought about what her readers might want when she was coming up with the recipes for this book.

This book has great ideas to get more vegetables into your diet. It is absolutely readable, the photos are great and the recipes have hints and tips written in an entertaining and amusing way. I sat down to flick through and found myself reading each page with enjoyment!

I could easily work my way through the recipes one by one, so I think this book will be used a great deal, unlike many that I have where I have one or maybe two recipes flagged and that's it.

Thanks to Carrie I now have veggies at breakfast thanks to her yummy smoothies - my favorite is the strawberry shake smoothie. I've long loved mashed cauliflower as a substitute to mashed potatoes but her recipe for Onion Bacon Mash takes that to the next level.

I have been mulling over the recipes since I got the book a couple of days ago, trying to decide what to try first. I decided on the Cheese and Onion Zucchini Fritters. It was a fabulous choice! They are incredibly delicious and so easy to make. This will become a new go-to recipe in my house for sure!! Can't wait to try them all!!

Hello! I'm an {ex-professional} pastry-chef-turned-cookbook-author-freelance-photographer-recipe-developr with a crazy, 4-country, 3-continent-spanning resume which includes such things as a chocolate TV show, a chocolate cookbook & making pastries for the Queen of England. I trained at the National Bakery School in London and have now turned my pastry chef talents to creating scrumptious *SANE food to help the world eat smarter, live better, and put the healthy back into healthy.

Here's a few cliff-notes: British American living in Seattle. Love eating. Have an accent like crack (apparently). Go on {very} long, crazy road-trips regularly. Live with a couple of large cameras, a pile of cats (Florence, Dougal, Penelope, Zebedee, Daisy, and Mr. McHenry), & a ridiculous amount of cocoa powder. Have a propensity for driving on anything that even vaguely resembles a dirt road - especially if it is not marked on a map. Think leeks are the finest vegetable on earth. Started this thing called The Big Breakfast Adventure & now entirely unable to stop. Adore daffodils. Dream about eating expeditions in Paris & Bruges. Couldn't do a push-up if my life depended on it. Have Had Chiko the Cat for a soul-mate {7/4/05 - 11/04/11}. Driving solo for 14 hours straight is pretty much nirvana-on-wheels to me. Wear a lot of black & white...that's how my brain works too. Like to get up at 4 am to photograph the sunrise and be first in line for breakfast. Believe that chia seeds are proof that God exists. Go completely gaga over the scent of roses. Known for my disarming honesty & openness: I say it how it is. Especially about me. Just to be clear though, it's not always rainbows and unicorns.

And there's more: {Fat} Dr. Pepper is delicious - even though I no longer drink it; it is evil! My kitchen is yellow, like butter. Believe Bragg's Apple Cider Vinegar could cure a lot of the world's ills. Have a fondness for sitting on the edge of large bodies of water. Avid label reader. Non-swimmer. Sunshine gets me {very} happy. Refuse to use my microwave unless it's a National Emergency. Have a secret crush on tractors. I. LOVE. VEGGIES. Do not have a TV. Recently added a confusing amount of pink to my wardrobe, and made friends with my local police sergeant. You never know when you might need a burly cop to come to the rescue. Consistently failed Mind Reading 101. Crazy about smoked trout; and white. Hopeless at sewing. Instigated a kitchen-wide ban on all plastic containers. Never leave home without six 72-hour kits in the car. Think Cauliflower Cheese is the bomb. Have a love-hate relationship with exercise, Sunmaid Raisin Bread, and my therapist. Would drive a really long way for really great food - and do, often. Eat flax seeds daily. I have a completely ridiculous schedule and half the time I swear I don't know my a** from my elbow. Nevertheless, I am * in LOVE * with my life. It's a little bit of crazy with a whole lot of *SANE.

*SANE = a term used in Jonathan Bailor's books to determine how healthful a food is for us.
