I am an amateur cook that hates to work around the kitchen with dull knives so after much thought and looking around for the right sharpening tool, I decided to buy Smith's Abrasive 8" Diamond Tri Hone. It's not cheap, but it is certainly well made and well thought out. The base is heavy enough and sturdy enough that it doesn't move on a tile surface while I sharpen my kitchen knives. I haven't yet tried all the sharpening surfaces, but I couple of swipes with the Arkansas stone left my Cuisineart Chef's knife dangerously sharp. This is well made piece of equipment for those who demand to have the best tools around to do the best job possible. I feel that it's well worth the money. I would recommend it with no hesitation.

Two diamond stones and one Arkansas stone in a cleverly designed base. I use them dry but you could lubricate with water or even oil (on the Arkansas stone) if you want. It also includes a little edge guide for knives that stores in the base. For most purposes this is all you need, although you might want to also get a super fine stone for edge polishing. This product is compact and well designed.

I bought this to use on some 10-year old J.A. Henckels "Pro S" knives. I have a 10" chef's knife, an 8" utility knife, and 4" and 3" paring knives. The only sharpening they've received during the last 10 years was with the cheap J.A. Henckels pull-through grinder. Most of the knives now had a very poor edge and were not sharp at all. Following the instructions provided, I started out with the coarse diamond stone to reset the knife edge to a good form. I then gradually worked in some pulls across the fine diamond stone. Then I used the Arkansas stone to finish off the knife edge. When complete, the knives were extremely sharp and felt as if they were brand new. I'm very pleased with this purchase and smile every time I reach for a knife. I think the 8" stone is the right size- it gives you plenty of length to drive the blade across while maintaining the ideal grind angle. The downside is that this is quite large to store. But you can't argue with the results. Highly recommended!
