A little over a year ago my husband and I stayed at the Snug Hollow B&B for our anniversary. We really enjoyed Barbara's cooking. Upon leaving, I bought a copy of her cookbook and it has quickly become my favorite. What really makes this vegetarian cookbook stand out is that she makes comfort food without the meat and without a bunch of overpriced processed soy products. My mother liked my copy of the cookbook so much that I just bought a second copy for her for Christmas. A few of our favorite recipes from the book are: rosemary bread, vegetable pot pie, biscuits and gravy and butternut squash soup.

Back in 2010, I carried my Mom and two daughters from Tennessee to Kentucky to stay at Snug Hollow for a few days, a trip recommended by Southern Living Magazine. As we waited for Barbara Napier, the B & B owner, to complete our dinner, the kitchen aromas wafted upstairs making our travel-worn tummies rumble and our mouths salivate. Her food tasted as good as it smelled, and, at the first meal, I decided I "needed" to be able cook like she did. At checkout time, she handed me a hardbound copy of her book, signed, "Eat more pancakes." That book was lost during an attic clean-up. Thankfully, it was available through Amazon, and I used points to make a nice dent in the purchase price of $29.99 (I am a book-aholic and like to keep book purchases under $10, preferably, closer to $5!) I fetch this vegetarian cookbook often for Crispy Cornmeal Waffles and Kentuscan Bean Soup.
