About the Author

Azar started her catering company in the San Francisco, Bay Area, in the early 1980s. Soon she became well recognized for her food and Sofreh Aghd (Persian wedding ceremony), attracting clients as far as New York and Los Angeles. Her catering company became most successful, working with the highly regarded chefs of the Fairmont and Sanit Francis Hotels. Her recipes were tested and honed to perfecion using modern healthy techniques, vegeteranism and low fat cooking. In this book Azar shares her secret recipes and techniques and for the first time introduces the use of tofu as a meat replacement in otherwise authentic Persian dishes such as Fesenjoon and Ghormeh Sabzee.

This book has a good number of excellent recipes ,have tried quite a few and they all turned out great .
It provides beautiful pictures of the finished dish as well as lots of tricks of the trade which is worth the price on its own.
I highly recommend this book,the recipes ,the pictures as well as all the information on the wedding section and persian customs .
I can't wait to try the rest of the recipes .

I have eaten my Mom's, Aunt's and even Mrs. Kamarei's amazing Iranian cooking forever but never believed that I could make it myself. My Mom tried to teach me some things but would never write them down. My Great Aunt would tell me in Farsi but her measurements involved using my fingers or counting bubbles. The last Persian cookbook I tried had all kinds of weird additions to the dishes. But Mrs. Kamarei's book is a Godsend! The dishes are traditional as I remember them but simple and easy to incorporate into a contemporary meal. The rices come out beautiful and colorful. The Tacheen was so easy and came out so neat and pretty - I was shocked at my own creation - My friend and I cleaned out half the casserole dish in one sitting. I am no chef, believe me, but this cookbook has made it so easy.

If you don't feel confident about making Persian food, try the Baklava recipe. It was easier than making a cake out of a box and my friends went crazy over it. People are asking me to make it for parties now!

I leave you with one tip - DON'T MESS WITH THE RECIPES - These are clearly perfected over many years and unless you are already an expert, stick to the plan.

Modern Persian Cooking is a wonderful cookbook, and a great addition to my cookbook library. I have many Persian cookbooks, which are very good also, but this one is quite unique in that a Persian caterer wrote the book, and it's also a lovely coffee table book, or a great gift. I've made several recipes from the book,which turned out wonderfully. Our favorite was the Aashe Anar ( Pomegranate Soup), it's worth getting the book just for this recipe although there are so many excellent recipes!
