5.0 out of 5 stars Healthy, Tastey! Easy for busy Moms and Seniors!
Easy one-page soup recipes literally made of vegetables from A to Z. Asparagus to Zucchini and everything in between. Although the author suggests barely cooking the vegetables, I've thrown the vegetables into a pressure cooker and cooked until mushy. The author's method is preferred, I am sure, but folks suffering from various ailments who need their vegetables cooked...

Easy one-page soup recipes literally made of vegetables from A to Z. Asparagus to Zucchini and everything in between. Although the author suggests barely cooking the vegetables, I've thrown the vegetables into a pressure cooker and cooked until mushy. The author's method is preferred, I am sure, but folks suffering from various ailments who need their vegetables cooked well will find that these vegetable soups still taste great with more cooking. Plenty of choices for lactose intolerant stomaches, folks with chewing issues, bowel maladies, etc.

The author uses potatoes as a thickening agent for many of the recipes ... when I've been in a rush or out of potatoes, I've used instant potatoes and the soups have tasted great. I just LOVE this soup recipe book. Anyone can modify any of the recipes to make it their own.

I found this book in a bookstore years ago. I bought about 10 books to give every household in my family for Christmas. Years later I found it on Amazon.com and I bought a few used copies to give out to friends -- warning: borrowers never return it -- you need more than one copy.

Get this soup recipe book. It is very much worth it. My favorite recipe is Broccoli Honey Mustard soup .... yummmm!
