Soup cookbooks exist by the thousands. Most, however, concentrate on ingredients and instructions for preparation. Soup's On is a different kettle of fish, meat, and lots of vegetables, including beans, beans, and more beans. Each recipe features a story about the ingredients or the person who contributed it. Did you know that peas have been found in 7,000 year-old Swiss Lake villages? That the spice cumin has been used to dye the robes of Buddhist monks yellow? That Benjamin Franklin suggested that the turkey, not the bald eagle, be designated the U.S. national bird? These tidbits and more entice this reader. My favorites among the recipes are Very Veggie Zuppa, with carrots and a sweet potato; Lucky 13-Bean Soup; Chicken Noodle Picante, with ginger and dried cayenne; Cow Puncher's Gullion, with ham and sauerkraut; and Shrimp File Gumbo. Some are labor intensive, others take no more than 45 minutes to fix. All are scrumptious.
