As a registered dietitian who grew up in Oxford, MS and now lives in Nashville, TN, I am no stranger to delicious Southern food and all the fat and calories, that unfortunately, traditionally come with it. I am a southern gal with a conundrum: How to enjoy the rich dishes I grew up eating and still eat lean and healthy. RD/MS Carolyn O'Neil combines the best of both worlds with rib sticking, palate pleasing and soul satisfying recipes using fresh ingredients that are calorie conscious, nutrient rich and pretty darn easy to prepare. This book will help you serve up better thighs, chops and buns and I don't just mean what's on the plate. Your body will thank you. Slim Down South is chock full of savvy Slim Down Secrets from from food professionals who livelihoods depend on eating. My final comment on this book and to Carolyn is "Bless Your Heart for writing it."

I love that this cookbook not only has great recipes with fantastic photography, but it has so much information and tips. From explaining WHY a food is good for you and WHY you should pair it with another, to so many ideas that are simple. Even if you aren't concerned about eating healthier and recipes (and that would be another issue), this book is a delight to just sit down with, read and savor!

The fabulous and figure friendly recipes-from breakfast to dessert- in The Slim Down South Cookbook prove that Southern foods can be just as delicious without all of those infamous Southern calories. Carolyn O'Neil's smart cooking tips and nutrition strategies for healthy living are a bonus. The beautiful food photos are mouthwatering too! Love it.
