Upon first look at this dandy little cookbook, many memories came flooding back to me. Every year, on a warm Sunday afternoon in August, my extended family would come together to watch the town's annual parade. As the side streets filled up with floats and marching bands, my aunt would cover the picnic table under the shade tree in the front yard and bring out garden fresh vegetables, a couple pans of bars, and "direct from the oven" SPAM Victory Buns. Those hot, melted, yummy sandwiches were what we all waited for. Our summertime treat!
A NEW favorite is the SPAM Stuffed Squash. What a delight to take what usually is a bland acorn squash and transform it into this wonderful combination of flavors and textures...including walnuts. Now, with this recipe, I can't wait until the end-of-the-summer motherload of squash to peek out from the garden vines.
I always keep a few of these books on hand for birthday treats and special surprises for friends and co-workers. And, did you know that you can re-use the empty can? It's perfect for cutting out "Aunt Sally Cookies"...remember them?

This original cookbook has the most interesting combination of SPAM history and innovative recipes from around the country. Each section of the USA is represented in the front of each chapter as a part of a cute illustrated pig and the regional recipes are spot-on. It's cool the author included home and professional chefs as contributors and the recipes are easy to prepare in home kitchens. A great gift idea - especially as stocking stuffers.

SPAM Potstickers.....who would have thought! I love love love potstickers and these were yummy! I have to say they were pretty simple to make. I am thinking the Fancy SPAM Musubi is next. What a fun cookbook.
