More About the Author

Kelly, of TheSpunkyCoconut.com, began to study nutrition in 2004 when her girls were very young. Her daughter, Ashley, was a baby and Zoe was a toddler at that time. Both girls were not well. Her naturopathic doctor worked with them to radically change their diet by removing gluten, casein, and sugar. Kelly and her husband soon realized that their own health problems could be resolved as well. It was very eye-opening to see how many kinds of issues could be treated with the diet. So, after years of research and experimentation, Kelly now creates food so similar to conventional wheat/dairy/sugar recipes that no one feels deprived. Together, through diet and biomedical treatments, their family is overcoming celiac disease, gluten-intolerance, ADD, and autism with great success. Kelly lives in Boulder County, Colorado with her husband and two daughters.

I am so excited about this book! I made two recipes out of it this last weekend - Roasted Banana and Rocky Road. WOW! So easy to follow and very fun flavors. I love that she gave options for thickeners.

Here's the reasons it's worth $20:

-This book is specifically for those seeking dairy free, refined sugar free, grain free, and/or vegan ice cream alternatives. I don't have the time or patience to develop even 5 recipes that meet these criteria AND taste as wonderful as these recipes do. I'm a busy woman. Give me the recipe and I can go with it.

-Since these recipes cater to special dietary needs, it calls for ingredients that a) can be expensive b) are not necessarily used in everyday cooking. For these reasons, I'd much rather spend $20 on recipes that I know have been tested with these ingredients by someone who has experience using them than spend a small fortune trying to come up with a recipe that makes the cut. Kelly has done all of the hard work for us here!

Once cherries are in season here, I'm going to make the bing cherry ice cream. Can't Wait!

I just love the recipes in this cookbook. My kids and I are dairy, sugar and gluten free. We avoid processed foods at all costs. I have spent years trying to reinvent all the foods typical kids like just so my kids could have similar things. This was so time and money consuming, testing and failing, testing and failing, especially when it involved frozen treats. I thought we would never be able to eat ice cream. This led to tears as the ice cream truck would pass the house or they served an ice cream treat at school. Until I found The Spunky Coconut! My kids can now enjoy all the things the other kids do, but it's healthy enough to be breakfast! I can feed my kids guilt-free ice cream! I can says 'yes' happily when they ask for seconds. It is well worth the cost! I give The Spunky Coconut cookbooks as gifts all the time. I try to share these amazing and healthy recipes with all my loved ones!

I didn't buy this book so I could just have another cook book.I purchased this book for my children who have food allergies and want to be able to enjoy the same things that other children enjoy....WELL WELL WORTH THE MONEY!!!! If you ever went into a store and tried to find many dairy free ice creams,you can't...This book gives you many options for your whole family....Job well done on the book.
