About the Author

Kelly V. Brozyna began to study nutrition in 2004 when she and her family were found to have reactions to gluten, dairy, and refined sugar. Inspired by raw food, Kelly incorporates nut milks and natural alternatives to sugar to create grain-free baked goods and desserts for everyone to enjoy. Together, through diet and biomedical treatments, their family is overcoming celiac disease, gluten-intolerance, ADD, and autism with great success. Kelly, of TheSpunkyCoconut.com, began to study nutrition in 2004 when her girls were very young. Her daughter, Ashley, was a baby and Zoe was a toddler at that time. Both girls were not well. Her naturopathic doctor worked with them to radically change their diet by removing gluten, casein, and sugar. Kelly and her husband soon realized that their own health problems could be resolved as well. It was very eye-opening to see how many kinds of issues could be treated with the diet. So, after years of research and experimentation, Kelly now creates food so similar to conventional wheat/dairy/sugar recipes that no one feels deprived. Together, through diet and biomedical treatments, their family is overcoming celiac disease, gluten-intolerance, ADD, and autism with great success. Kelly lives in Boulder County, Colorado with her husband and three daughters.

Kelly Brozyna is the recipe developer, mom and voice behind the blog The Spunky Coconut [...]A year ago I bought her first cookbook, "The Spunky Coconut Cookbook: Gluten-free, Casein-free Sugar-Free," and have enjoyed it immensely. Needless to say, I have been anticipating the release of this, her second book!

If you follow a grain-free, gluten-free, casein-free, dairy-free, egg-free diet or any combination thereof or are trying to include in your diet low-glycemic, nutritionally dense foods, this cookbook is for you. You'll find that the recipes call for power-packed ingredients like coconut, chia seed, hemp seed, legumes and nuts. If you or someone you love is diabetic, celiac, lactose intolerant or following the gluten-free/casein-free autistic diet, this book is for you! All 80 recipes are gluten-free and casein-free. 50 of them are egg-free. If the alternative ingredients used in many of the recipes intimidate you, fear not, Kelly explains what each ingredient is, why it needs to be in your diet and where to find it.

If you follow The Spunky Coconut blog ([...]) or have Kelly's first cookbook, you probably know a little about the journey she has been on with her family. Together through diet and biomedical treatments, they are overcoming celiac disease, gluten-intolerance, ADD and autism with great success.

I have had "The Spunky Coconut Cookbook Grain-free Baked Goods & Desserts" in hand for a week and have tried the following recipes:

* Coyote Cookie Bars: Heavenly grain-free goodness. For being grain-free they sure taste like whole wheat! I couldn't get enough of them.

* Chai Granola: Packed with nutrient-dense walnuts and chia seed. My kids enjoyed this oat-free, grain-free granola on Steamboat Yogurt.

* Steamboat Yogurt: YES, you can make yogurt using nut milk! Kelly shows us how.

* Divine Vegan Fudge Cake with Macadamia Frosting: "Divine" this dessert was. And the Macadamia Frosting--wow!

I highly recommend this book if you are trying make the switch from processed, high-sugar baked goods and treats to the more wholesome variety. Kelly's recipes are innovative and easy!

I also like that Kelly photographs and designs her cookbooks, front to back, inside and out and has them printed in the USA.

I purchased Kelly's first cookbook, The Spunky Coconut, about a year or so ago. That book is amazing and I follow her blog and love her recipes, so I knew I would love this cookbook as well. This book is a wonderful resource for anyone who has cut out gluten and casein but doesn't want to replace those things with junk flours and processed milk replacement products.

Honestly, I wish I could give this 4.5 stars but since that is not an option, 4 it is. The only reason I do not give this book 5 stars is due to the price. When I purchased the first cookbook, it was explained to me that the high price is because Kelly and her husband have to pay to have their books published. While I understand that, I wish there was a way to bring down the price. With that said, I will continue to buy any future cookbooks written by Kelly at nearly any price (within reason!) - they are that good!

This is a gorgeous little cookbook with photos for most recipes, and easy to follow instructions. And though it doesn't say it in the title (that would probably get pretty wordy), the recipes are all free of refined sugars too, and lower in sugar overall than your average recipes. A definite goldmine for our sweets-loving household.

My husband is allergic to eggs, so this does limit the number or recipes I could try directly from the book without alterations. I would say that a little over half of the recipes call for eggs, but some don't ... and those my friends, are true gems. (The author notes "egg-free" right next to the title, so helpful!)

The first recipe I made from this cookbook was the Red Rock Rolls (onion/oregano version), and then I moved onto the Cinnamon Raisin Bagels. Both recipes were amazingly delicious (the dough alone is addictive), and have become repeats each week in our house since my husband thankfully loves them (so low in sugar and they take care of his mid-day sweets cravings!).

I can't wait to enjoy the rest of the recipes, as the results are spot on, and the author really knows how to add flavor. This cookbook is a true must for anyone wanting to dabble in grain-free baking.
