I purchased this sharpener from Sur La Table after they used it to sharpen my knives in front of me. My Shun Ken Onion knives are my main knives for when I cook. It had been about 3 months before I had them sharpened by Sur La Table using this sharpener and when they sharpened the knives it had a brand new edge on it again. Just like new, I didn't need to put pressure on the knife to cut through meat, veggies, fruit, etc.

I also used the sharpener on my cheap henkles steak knives. I gently attempted cutting a tomato with the steak knives to test how sharp the knife was(I guess I watch too many infomercials). My steak knives are not serrated. After I ran the knives through this sharpener, every knife cut through the tomato like a hot knife through butter. I was highly impressed. When I am highly satisfied with certain products I can't help not pushing it on my friends and family. I have a feeling this will be my last sharpener.

It is really really easy to use too.

The three sharpening wheels are coarse, medium and fine. I run each knife about 15 times with light pressure through each wheel and check the edge. If I am not satisfied, I repeat the process. Just make sure to add water to the sharpener to reduce friction, heat and buildup. I will never use another sharpening block.

I was devastated when Shun decided to quit honoring their lifetime sharpening offer (UPDATE: As of September 2012 Shun is offering sharpening again free of charge). I used to get my knives sharpened by Shun once a year to keep them in peak shape. Of course it meant sending them away for a few weeks to a month, but it seemed well worth it at the time.

When they stopped I wasn't going to continue using the service they provided and looked for a home alternative. I checked out several knife sharpeners, but most weren't made for asian knives and the ones that were were often just a single step or at most a double step sharpener. Three different levels of sharpening allows me to correct not just minor blade imperfections but also small blade chips. I also found that many of the other sharpeners I looked at and tried (especially the electric ones) were fine for to cover 90% of the 6-10 inch blades I own, but failed at sharpening much of the 3 inch paring blades. The guard on this sharpener is quite close to the wheels themselves and I haven't had any trouble sharpening any of my knives from the 3 inch to the 10 inch.

I also like that the wheels on this sharpener are replaceable. While I haven't had to do it yet I know that over time the stones may become uneven and may end up doing more damage to the blade than they do good. In the long run I see being able to replace the stones (and being able to replace just the stone thats worn out) as something that will save me a lot of money.

The only drawback I can see is that the sharpener doesn't do serrated knives so those will have to still be taken in to be sharpened.

I got this because I didn't want the hassle of taking my knives somewhere to have them sharpened. They seemed quite dull to me. I have a Wusthoff and a Global Santoku. This sharpener worked very well for them. They are again sharp and cut through stuff like butter. It did leave some marks on the edge of the knife and this might have been due to user error also. I have to say I am totally happy with it and if you want your knives to be perfect then take them to a professional sharpener. If you just want them sharp..... I think this is a good choice.

I already have one of these in black and red. Not that the color really matters. What matters is that this is a really good sharpener. If you are going to invest in Global knives then this is a must have. It doesn't matter how nice of a knife you buy, it will need sharpening eventually. It's very easy to use and will have your knives gliding through anything you touch them to just like the day you first used them. The water trough is a nice touch because it really helps to wet up the grit of sharpening stones. Some people have complained about this sharpener scratching the side of their knives. It does leave a bit of a line, but it is not bad at all. Can't really comment on how this sharpener does with other higher end knives. I have a cheapo small knife that gets a really nice edge from this tool. So I imagine it must work on almost any knife. All the rest of my knives are Globals and it works like magic on them.

The Minosharp 3 sharpener does a pretty good job of putting an edge on knives.
The knives are certainly sharp enough afterward to do just about any cutting/dicing/slicing you need to do.
Is it a new edge quality? No, not really. But it is good enough. And the good thing about it is that
sharpening a knife is really easy and quick. It's all about time and effort and this thing does save time
and does reduce effort. However, the unit is somewhat pricey at around $80. So I give it a rating of 4 and
will update if my mind changes any.
