Stainless Steel Mini Canning Rack

I am a beginner small-batch canner and I needed a canning rack for a regular stainless steel pot to sit on my smooth-top stove. I tried the canning-ring method of keeping the jars off the bottom of the pan and it's really not something I wanted to continue doing. I found this rack on Amazon (the ONLY small rack available that I could find) and started using it.

It's a pretty straightforward piece of equipment. Nothing fancy. Probably designed a hundred years ago. The only drawback, and I would say it's a major one, is that the handles to pull the rack out of the water are too short. I end up scooping enough water out of the pot so I can grab the handles without burning myself. I'm thinking of buying some wire and jerry-rigging extensions to the handles.

I wasn't able to use all the great canners on Amazon because I have a glasstop stove. For most glasstop stoves, you need a flat-bottom canner, which is hard to find, and it can't hang more than 1" off the edge, which makes using a full-size rack with a large stock pot impossible too on my 8.5" burners. This rack was the perfect solution! It does fit four small jars or two large jars comfortably. I won't have a huge canning operation so this suits me fine. And pay no attention to the long shipping estimate -- I got mine in four days, counting a weekend! Very very satisfied.

I need to can on a flat top range. Almost all canners have an uneven bottom so heat can't transfer. This rack only handles small batches but I can put into my Revere Ware stock pots and can safely.

This mini canning rack was exactly what I needed for my 8 quart pressure cooker. Some reviews state that the handles are too short. This did not pose a problem, as my pressure cooker is only slightly taller. Instead of paying up to $200 for a huge pressure canner with rack, I was able to pick up a new pressure cooker and canning rack for under $75!
