Very high quality product. The results are excellent with heavy whipping cream. It does not work well with half and half, but they include some recipes with yogurt that look interesting. The way these work is that you pour a pint (473ml) of cream into the container, screw on the cap and load the charge. Loading of the charge is very simple as it fits inside of an enclosure and as you gently screw it into place it releases the charge into the cream chamber. You then store it in the refrigerator until needed, shake it a few times and it just works. When it runs out of creme, you release any excess pressure with the trigger(the amount of creme and charge are well in sync,) you remove the cap, wash it out, refill and recharge. Each charge lasts through a pint of cream. The advantage of the thermo whipper, is that you can leave it out for several hours or take it outside and it stays cold for hours. The cost per pint to use it includes the cost of both the charge and the cost of the heavy whipping cream. It comes with 3 styles of plastic dispensing tubes, and two types of gaskets (one for cold and one for hot fluids.) Tastes great in coffee, and is great for adding life to desserts.

I read and followed the instructions included with the thermal whipper. What a pleasant surprise when I made my first batch of fresh whipped cream. And I can pronounce all the ingredients! Let's see, heavy whipping cream, sugar, vanilla and NO2 (propellant). One of the keys to whipped cream is that there has to be enough fat in the dairy (so half-and-half doesn't work). My whipped cream lasted the full 10 days. But always make sure to shake the dispenser to move the whipped contents down towards the dispensing head. I still had a lot of whipped cream still stuck at the bottom of the bottle after I thought there was no more cream.

The whipped cream dispenser comes with three dispensing tips, two rubber washers (white for cold, red for hot), a NO2 cartridge cap, cap for covering the NO2 valve for normal use, a cleaning brush if you need to clean out the dispensing head's nozzle or dispensing tips, instruction and recipe booklet. Changing the white rubber washer is easy since it has a pull ring: the red washer for some reason doesn't have a pull ring. I see that the iSi Professional Food & Cream Gourmet Whipper - Brushed Stainless Steel comes with only a red washer and the washer has a pull tab. But you have to put the bottle in either a ice or hot water bath between use since it's not a vacuum bottle.

I see that iSi also makes a set of two needle tips with covers. I'll need to try those out for making stuff like cannelloni.

The important thing to always do before charging with a NO2 cartridge is to put a dispensing tip on the dispenser head. Properly putting on that dispensing tip (no need to torque down, tighten just to the point where the tip seats onto the valve stem) closes the value so no NO2 escapes out during charging. And for my pint of whipped cream, I used only one NO2 cartridge. I think that 0.5 liter / 1 pint size is just the right size for home use.

I bought the iSi 9012 The Trick with the Whip- Creations Cookbook. The "Trick" book has more recipe ideas than the recipe booklet that was provided with my thermal whipper especially when it came to the hot or savory preparations like espumas. But I think it's overpriced. The book likes like something that I could have got as a part of a iSi gift bundle The included recipe booklet was mostly for cold or sweet items except for one hot sweet recipe.

I think my iSi whipped cream dispensers were still made in Austria (the new ones are Made in China).

PROS:
Thermos like container helps keep cold preparations cold and hot preparations hot as advertised without the need of an ice or hot water bath (unless you think you need it).

Heavy weight double walled stainless should not dent easily if dropped. If you like polished stainless, this is the one to get.

You use fresher and healthier ingredients you can pronounce.


CONS:
The instruction booklet could have been written a bit clearer.

I've always wanted a whipped cream dispenser - I like to cook and many times whipped cream adds a lot to a meal. After shopping around a little (a lot) I bought this unit. I have now made 10 batches (1 pint) and it is as good as a dispenser could be, I love it!! Only problem is, it's so convenient, easy to make and tastes so damn good I'm trying to think of anything I can put the cream on ! French toast, coffee, ice cream,croissants,waffles, etc. I make a raspberry cream that is outstanding and easy: for each pint of heavy cream add 2 tablespoons of sugar and 2 ounces of raspberry liquer. Mix this up BEFORE putting it into the unit, charge it then shake a couple of times -- excellent!! If you want the best dispenser there is, spend a few more bucks and get this one, you won't regret it.
