Product Description

Product Description

The Staub journey begins in Alsace, France. Rich in history, food, and craft, it is a region renowned for hearty one-pot recipes. Staub has been producing the best cast iron products for professional and aspiring cooks since 1974. Staub's Tajine is for the well-travelled palate. Staub has evolved the traditional Moroccan tajine with a cast iron base and oven-safe ceramic dome that locks in moisture with no need to open, stir or turn.

Whether it's an old family recipe or a new cuisine adventure, the best way to develop the sweet-and-sour complexity of Moroccan stew is by slow cooking in the traditional tagine pot. Staub's modern version of this vessel combines function and style to create a hardworking, reliable tool that can also go straight to the table for elegant communal dining. Crafted with an 11-inch enameled cast-iron base and ceramic lid for uniform warming and superior heat retention, the heavyweight construction performs best at low to medium temperatures over longer time periods, letting flavors intensify and keeping ingredients scrumptiously moist. The base's dark matte interior is almost indestructible and doesn't need seasoning; rather, the oils produced in cooking seep into the surface pores to create an organic nonstick coating. Fitting snugly onto the base's wide rim, the cone cover concentrates flavors while allowing excess air to escape through the small hole near the top. When it's time to present a steaming hot dish, the knobbed end facilitates lifting. Cast in a single-use sand mold, each tagine has its own subtle variations to make it truly unique. The double-coated enamel resists chips and rust, and the smooth bottom is suitable for any cooking or dining surface. The tagine goes safely into the dishwasher, though hand washing is recommended for heavy use, and it's backed by a lifetime limited warranty. --Kara Karll

Item model number: 1302823 is Staub's OLD tagine design.

______________________________________________

HERE is the most current Staub Tagine design:
Staub Tajine - Cast Iron Base w/Ceramic Dome - 11" - Large - Dark Blue
______________________________________________

The above model is my second Staub tagine and Staub's third tagine design.

Staub redesigned their product because the first model's design flaw (Item model number: 1302823)was this:

Staub's tagine lid had a partial groove in the ceramic upper section; it served as a dysfunctional "handle".
When the tagine was in use, it naturally was very hot, and the indentation in the ceramic lid was so shallow that it was tricky to remove the lid with a clumsy potholder, and not drop the lid on the floor.

Although my first tagine was red, with a far shallower groove than is shown here, Do, kindly see, their (OLD) original Staub tagine design has a hole for pressurized steam escape. Staub Cast Iron Tagine with Ceramic Dome, Black

When I called Staub's California office and spoke to their manager regarding the tagine some years ago, I was fobbed off by a rude manager who said she didn't have any "problem" with her tagine. That is always an unwelcome customer service attitude. Obviously I was not a single Staub complaint, or Staub would not have completely and dramatically re-designed their tajine lid. However, it was such a draining and unpleasant exchange with Staub's Customer Service.

Fortunately I have other tagines, both traditional and non-traditional, from which to alternate.

Staub's new design is Gorgeous! -

~ Staub's new design is also functionally WORTHLESS!

Bought a 2nd one we liked it so much. Cast base is very nice - feel we'll be less likely to break it. Cooks beautiful flavour some meals that don't dry out. Very happy. Looks good too. Good size - 2 feeds a dinner party of hungry adults very easily with lots of leftovers.

Looking at the photo, I see what appears to be a vent hole..
It this is the case it deeats the purpose o the tagine method o cooking where it captures all the steam to base the food.
