not really a saute pan, April 7, 2010

I purchased this with the idea that I would be getting a workhorse of a pan that could be used to fry, saute or to braise. This is still a nice pan, but I'm giving it only 4 stars based on the difficulty of cleaning. It has a nice finish and is a nice size, the interior finish is also satisfactory. I have cooked a smaller roast in the oven with good results. I have three other Staub pans that I love and use all the time. The down side of the saute pan is the hexagon design on the bottom of the inside. Its bumpy and has little valleys, stuff seems to steam instead of saute (I use higher heat) and then sticks to the bottom. The valleys are hard to clean, you end up trying to clean each one as you can't rub a cleaning pad across the bottom, the bumps keep it from making contact evenly. Would I buy this pan again? No. I would purchase another pan, probably another dutch oven style. This is too expensive to sit on a shelf like it does at my house.
