Most of the collection's quiches, quesadillas, chowders and grilled entrees can be made in less than an hour?due in large part to the use of prepared ingredients. Consequently, purists may balk at using canned pineapple for an ambrosia, instant chicken bouillon granules in a soup, orange juice concentrate in a marinade or even chocolate pudding mix in cream puffs. I checked this book out of the library and so far all the recipes I've tried are pretty good. I also like the fact that they list diet exchanges since I follow the exchange plan. Good colorful pictures too. I plan on buying this one. Definately a good buy for the money.

In the early 1980's I needed to lose a little weight and I joined a group at my church that was using this book for a guide. The food exchanges were really new to me and I had to do some studying to figure them out but it was well worth the time.
Over the years, any time I need to lose some weight (we owned Candy Store for 25 years) I just got out my Eat and Stay Slim book and copied off some charts to keep track of my food exchanges and got started.
The book features simple but delicious recipes and easy exercises, to go along with the diet, and they just take a few minutes a day.

This "diet" calls for just good sound nutrition, no fad stuff. When you get to your weight goal you can simply increase your exhanges until you find your own maintence level. I highly recommend this book, it's been helpful for me.

I received this book as a gift. While I agree the recipes are great, the time that the majority of them require is just not available to those of us who are busying working a 50 hr week and chasing kids. However, if you've got the time this may be the best one for you.
