Get this book even if you don't like to cook, the nutrition tips alone are worth the purchase. I love the recipes (at least the ones I've tried so far--onion rings, enchilada bake and the apple pear crisp.

There are lots of good ideas and recipes in this book BUT... first of all, I think the "sneak" theme is stupid; second, a lot of the recipes are repeats from her other books, with maybe the name and one ingredient changed. I have her earlier book "Healthy Homestyle Cooking", which is my BIBLE, and would recommend that book over Stealth Health.

All the recipes I have made thus far has been absolutely fantastic. I highly recommend trying the black bean brownies. The first time I saw that I thought it sounded too gross, but it is better then bakery bought sweets! The beans keep them moist and there's only 2tbs of wheat which can be omitted for those who are allergic to it, without sacrificing any of the taste. This is THE cookbook I'll be giving all newlyweds, it's that good.

The very first day I received this cookbook in the mail, I tried 3 recipes. Everyone in my family has specific likes and dislikes. My husband hates anything with dairy but loved the Spinach Cheese squares. All my kids hate veggies but loved the Pecan Crusted Sweet Potatoes. They had no idea that these things were actually "good" for them because they tasted so wonderful. The cookbook is also full of tons of nutritional information that is presented in an easy to understand format. Great book!

This book is by far the best book on eating healthfully. Why? Because Evelyn teaches you how to sneak "good food" (veggies, fiber, even soy) into "normal food". Yeah, we all know we should eat cruciforous veggies, more fiber, some soy, fruits, etc. But we don't. Evelyn shows you ways to pump up the nutritional value of foods you like--in a way that you won't even notice. Adding black beans to brownies is one solution--and it works (adds fiber, phytochemicals) and the brownies taste good, not healthy. She teaches you to puree cauliflower into your potatoes, so that you get the boost of nutrition. (I HATE cauliflower, but I don't mind eating it this way). All in all, I can't wait for more Stealth Health recipes. If you have kids, doubting husbands, or just plain don't like the taste of healthy food, buy this book. :) If you do like healthy food, this book will amaze you with how good healthy eating can taste.

This book is great! I've already tried three recipes and thought they were all tasty, esp. the Carrot Cake Smoothie! My only criticism of this book is that there don't seem to be many "quick" recipes, the sort that you can throw together in 30 minutes after a long day at work. The main dish recipes I looked at required a blender/food processor, a stovetop, AND the oven. For me, that's a little too much too accomplish after work!

I'm always trying to find ways to get more vegetables into my kids diet--this book has a lot of great solutions. The recipes are easy to make even for my picky family. I loved the Pesto Pasta Surprise and the Sunburst Soup. The pizza recipe has become our family favorite. I also like how the author described how she performed a nutriition sneak for each recipe---it helps give me ideas for some of our meal standbys. The nutrition information in each section is motivating, especially the studies that are scattered throughout the book.

However, I absolutely love the black bean brownie recipe. I've tried a million "healthy" brownie recipes and this is the only one I really like. But I use only about 2 tsp. espresso powder -- otherwise they're too mocha-tasting. I also add 2 tsp. vanilla, and use whole eggs instead of just whites.

I have been wanting to purchase this book for a long time. However, I have been disappointed with other books that promised great tasting recipes for health and didn't want to waste more money. Finally,I decided to purchase Stealth Health through the used section of Amazon.com, which was a very good experience in itself. The good experience did not end there. Every recipe we have tried from this book has been delicious!!! My husband does not eat bran cereal, but did in The Date Nut Bran Muffins and didn't even know it(still doesn't know it). I used dates and nuts in half of the batch for my taste and raisins in the other half for his. I really dislike cauliflower, but couldn't even tell it was in the Twice-Baked Potatoes-and I was the one that prepared the potatoes.Both of us enjoy rice pudding. The Golden Rice Pudding and all of the recipes can be enjoyed without feeling quilty. As for the other Healthy Cook Books purchased in the past-they will be donated to make room for other books written by Evelyn Tribole.

The recipes in this book are healthy but they are not neccessarily easy or quick to prepare. If you are cooking for others they may be fooled by the "sneak" ingredients but after all the shopping, chopping, & measuring entailed in preparing these dishes, the cook sure won't be fooled. Many recipes are very difficult to prepare without a food processor and some ingredients are not to be found in the average grocery store. I was hoping for recipes that required less preparation & simpler ingredients. The book was not a total dissappointment; the recipes were tasty but if you are looking for shortcuts to good nutrition, look elsewhere.

The purpose of this book is to assist the average person with "sneaking" more healthy food into their diet. These stealth tips take on a variety of forms, from adding grated vegetables to baked goods to identifying foods that meet a variety of nutritional needs to creating delicious yet healthy meals.

Each chapter of the book is devoted to a specific dietary requirement, including increasing your intake of vegetables, fruit, calcium, soy products, beans, fiber, and iron plus decreasing your intake of fat. Author Tribole first makes a compelling case for WHY that particular nutritional need is important and then offers various suggestions for meeting this need. Every chapter also includes 5 ways to add the food to your meals, 20 ways to increase the food in your diet, and a nice selection of recipes. So far, the recipes I have (Harvest Granola and Breakfast Pudding) have been both easy-to-make and very tasty. I can't wait to make the Marble Cheesecake with Tofu!

My one disappointment with this book was the vegetable chapter. I was hoping that this section would give me ideas for my husband, who doesn't like most vegetables, but I thought that most of the suggestions were either things that I had already seen elsewhere or things that wouldn't work for someone who doesn't like vegetables to begin with. Still, I was impressed with this book overall, and I definitely plan to continue trying the recipes as well as the more unique eating strategies.
