This knife is beautiful and very sharp. However, after two months of use, it seems to be getting dull already compared to when it first arrived. I'm not sure what I'm doing wrong with it, but I do clean it and dry it by hand after every use. I have never let food dry on the knife, or placed it in the dish washer. I always clean it with a small amount of dish detergent...

I collect kitchen knives, and I did not have a utility knife. This fit the gap perfectly. Shun knives are extremely sharp, and the angle on this gives confident feel and control when cutting food. I've used a Shun Classic 7-Inch Santoku Hollow Ground knife for over 7 years now, and it's my absolute favorite for cutting vegetables because of it's razor sharpness and the release you get from the hollow ground. However, on the negative side, the extremely sharp, thin edge is easily damaged. Mine has many nicks in it over the 7 years of use.

The Shun Steel Angled 6 in Utility Knife is my third Shun knife. I find
all of their knives superior to any other brand I have tried. This handles
well and there are many times when a smaller knife suits me better. The
angle fits well and works well.

I choose my knives by how well they do their own specific job-- Henckels Pro-S chef's knives, Wusthof santoku knives, and THIS beautiful Shun for fine and delicate work. It's my wife's favorite knife so it gets used for 'utility' but I personally save it for herbs, scallions, fine slicing and point work. Great balance, too.

This knife is beautiful and very sharp. However, after two months of use, it seems to be getting dull already compared to when it first arrived. I'm not sure what I'm doing wrong with it, but I do clean it and dry it by hand after every use. I have never let food dry on the knife, or placed it in the dish washer. I always clean it with a small amount of dish detergent and a Mr. Clean eraser (melamine sponge) along the blade sides. I'm very puzzled as to why such a nice knife would dull so fast as even really inexpensive knives do not seem to dull so noticeably after a few months of use. The dulling is most noticeable when cutting tomatoes as their skins can be difficult for dull knives to pierce cleanly.

My only other thought is that my cutting board may not be suitable for the knife. If my standard polypropylene cutting board isn't good enough for the knife, using Shun knives probably involves too much upkeep/maintenance effort for me. Although the knives are beautiful and sharp, they're just too delicate for this average everyday cook.

I have come to appreciate the quality, design, and very much respect the sharpness of Shun knives. New in box (so not some knockoff) the Alton's angled knife is a chef's dream, and the 6" size is very useful size, not too big or small, just right.

What disappointed was the blade manufacture. It's lopsided in the way it went through the sharpening process. About a 3 mm polished and sharpened surface on left side of knife, and about a 5 mm sharpened and polished on the right side. Does not affect use, but these knives are known for their beauty as well as their function.

As sharp and high quality as these knives are, I also think they could easily modify the shipping plastic to become the knife's protective case once it gets to the destination kitchen; instead, I have no choice but to recycle this form-fitting plastic and wish people thought more about the planet and knife drawer.

The 10 degree angle to the handle and the incredibly sharp blade make for great slicing. However, within a week of use, the blade got a chip in it and started to rust around the damage. We never dropped it but did put it in the sink with other dishes to hand wash. So be warned this knife is incredibly fragile. If you treat your knives like delicate artwork, this knife is for you. If you expect your knife to be a tool that holds up to mild use, stay away.
