Sharon gives great advice for people who are looking to utilize a vegan take on traditional salads; but one can just as easily use any food they wish while following her simple suggestions for balancing the six tastes: sweet, salty, pungent, bitter and astringent. You can creatively fine-tune to fit your particular taste buds.
I thought I knew most everything about how to make a good salad, yet I found myself frequently highlighting and bookmarking pages of brand new information and tricks of the trade that I've never seen before. Exciting!
There are myriad suggestions to create the perfect texture, incorporating the softness of raw, dried or grilled fruits and vegetables, grains, polenta, pastas, legumes, tofu or tempeh with the crunchiness of raw or toasted nuts and seeds, sesame sticks, tortilla and pita chips and crumbles, wasabi peas, granola and whole grain croutons to name a few! She breaks it all down, showing us how to prepare each ingredient in the most sumptuous way.
Sharon also guides us on a trip through her pantry of multitudinous oils and vinegars, describing the taste and essence of each one, offering suggestions for perfect, complimentary blends.
The mouth-watering pictures and sense-evoking language made me yearn for a salad while reading! At one point I had to suffice with dipping just tempeh in my own dressing concoction 'til I made it to the store to get more ingredients!
It's obvious how much Sharon loves creating her vegan works of art. She brings heart and passion to the process and, like a true Italian, invites us to create sensational connections and memories with our loved ones around the table.
