Created by grill-master Steven Raichlen, this sweet-and-smoky barbecue rub enhances the flavor of meats, poultry, seafood, and vegetables, whether cooking on the grill, in the pit, or in a smoker. The rub can be used in two basic ways. Sprinkle it on last minute like seasoned salt, or use it as a cure by rubbing it into meat then letting the meat marinate in the refrigerator for several hours before cooking. A little bit goes a long way--2 to 3 teaspoons per pound does the trick. The 6-ounce container of spice blend measures 3-4/5 by 3-4/5 by 2-1/5 inches and should be stored away from heat and light. Use the rub within four months of purchase for best results.

I bought this rub to replace an old Kansas City favorite, the Brisket Rub from Stephenson's Apple Orchard. Stephenson's closed forever in 2007. This product is as close as I have been able to come to the Stephenson's product, and it does a nice job, but lacks the spiciness of the original. I didn't expect it to be as good, and it wasn't, but it brings out the flavor of brisket well, and captures the essence that Kansas City BBQ is famous for.

Not too sweet - not too smoky - a perfect rub for salmon, pork, and chicken. A great alternative to the sweeter sauces we used to prepare. We order two containers at a time so we don't run out.

The first time I tried it, I thought maybe I did not give it enough time to soak into the meat. I then used it again rubbing it to the meat. I then put the meat in a container and placed back into the refrigerator. After two hours, I took the meat out and prepared side dishes. I let the meat sit for about 20 minutes and then cooked it. For too much cumin for me and the hint of coco was to strong. I will stick with other rubs I use.
