Preface

Until my last birthday, I never thought about getting older. But suddenly, I needed reading glasses, and missing my one-hour walk meant stiffness in my joints. Who knew this could happen so suddenly? For the most part, I watch what I eat, and I've always been healthy. But I had to admit, I was getting older.

As a chef and dietitian, I've always advocated the preventative powers of food. I truly believed the connection between diet and health encompassed the aging process, so I decided to dig a little deeper. I researched free radicals, antioxidants, degenerative diseases, and more. I discovered that every day, around the world, thousands of scientists are unlocking extraordinary antiaging secrets in the most ordinary foods in our cupboards. From Tokyo to Helsinki and from spinach to nuts, fresh foods are being sliced and diced, mashed and minced, and placed not only on dinner plates, but also under microscopes. And in test tubes all over, the results are surprising and affirming. Food not only has the power to heal; it specifically has the potential to reverse many symptoms of aging. With that in mind, I wrote this book to translate the harvest of research to a feast of delicious recipes.

More About the Author

Cheryl Forberg RD is a New York Times bestselling author, a James Beard award-winning chef, nutritionist and culinary consultant for NBC's The Biggest Loser. Her role is to help overweight contestants transform their bodies, health and ultimately, their lives. A culinary expert and registered dietitian, she has shared cooking and nutrition tips with the contestants and viewers for eleven seasons.

Cheryl received her culinary education at the California Culinary Academy (CCA) in San Francisco. After graduating from the CCA, she embarked on a European apprenticeship journey, which culminated in stints at top French restaurants from Champagne to Strasbourg. Upon return to the United States, Ms. Forberg was chosen for the opening team of Postrio, Wolfgang Puck's first venture in northern California.

Cheryl's passionate interest in healthy cooking led to an exodus from restaurant kitchens and an entrée to some of the most prestigious households in America. During this period she held the coveted position of Private Chef for Lucasfilm, Ltd. in northern California. She went on to earn a degree in Nutrition and Clinical Dietetics and an RD (registered dietitian) credential from the University of California at Berkeley. As a former research dietitian at Cedars Sinai Medical Center in Los Angeles, she had the opportunity to integrate her scientific background into recipe creation for a variety of dietary protocols. This distinctive skill set enabled her to extend her culinary expertise beyond celebrated restaurant kitchens into the creation of inspired recipes that are also healthful. She has developed a clear and concise recipe format, easily understood by novice students.

Cheryl is a food and nutrition journalist, and her writing and recipes have appeared in mainstream culinary and health publications, including Sunset, Health, and Prevention magazines as well as the Washington Post. She is on the advisory board for Prevention magazine.

Cheryl co-wrote the eating plan for The Biggest Loser. She has written or contributed to thirteen books, including several NYT bestsellers - The Biggest Loser: The Weight Loss Program, The Biggest Loser Complete Calorie Counter, The Biggest Loser 30-Day Jump Start and Positively Ageless: A 28-Day Plan for a Younger, Slimmer, Sexier You.

I bought this book because of its intriguing title and appealing cover. I'm sure glad I did. I'm beginning to execute Chef/Nutritionist Forberg's suggestions into my daily life. Not only are her recipes delicious, I feel more energetic---and its only been a few weeks.

Who needs botox when berries, beans, greens, fish and other scrumptious natural foods will do the trick!

I am a fitness professional, and last May I attended a lecture at UCLA on anti-aging foods taught by the author. I loved everything she talked about and immediately ordered her book from Amazon. For the last month I have eaten mainly the foods she extolled (fruits, veggies, nuts, olive oil, fish, soy) and have made many of the recipes in the book. I have never felt better!In fact,I am planning on giving this book to all my training clients for Christmas. Even my husband and teenage kids love most of the recipes. Every recipe has been absolutely delicious and fairly simple to make. You may need to go to a special market that sells organic or ethnic food to buy some of the ingredients rather than find everything at the supermarket, but it's worth it. My only complaint is that she didn't include more recipes using cocoa powder. It has the highest antioxidant rating, yet she features it in only 3 recipes--none of them dessert! I hope Cheryl does a second book. Atkins, shmatkins! This is the way to eat!

I have always wanted to learn about the benefits of antioxidants and this book certainly gave me the information I needed and wanted. Great book and extremely informative!! Interesting and yummy recipes too!
