In the past my wife would bake cornbread in the preparation of cornbread dressing; as a result of this more complicated alternative we didn't have cornbread dressing all that often. When I say cornbread dressing I'm referring to a stuffing mix that is served as a separate dish and never sees the insides of a turkey or chicken.

I'll freely admit my love of cornbread dressing; I'd request my wife make an abundant supply so I could enjoy it for weeks afterward. It could even get to the point of having to freeze individual servings so they wouldn't' spoil in the refrigerator. I did and still do really enjoy cornbread dressing!

Then we entered a new age; an age of easily and quickly prepared cornbread dressing. As you might expect my wife has never been interested in returning to the old do-it-yourself method of preparation. What is also pleasing to me, as a consumer, is the very good taste the Kraft Stove top dressing has; it doesn't leave me wishing for the old ways but is an entirely satisfactory replacement and a lot easier and faster.

She has always cooked the dressing on the stove top in a large pan and uses around six boxes of the mix. In addition to following the directions on the side she always sautés onions and garlic and adds that to the mix along with sliced mushrooms and chopped up giblets if available.

The results are delicious and relatively quickly prepared. As a result we can now have cornbread dressing more often which pleases me greatly!

This is boxed stuffing which -- as in all boxed foods -- in my mind is the equivalent of bland, bleh food. My husband, though, actually prefers this over my (sometimes) labor intensive homemade stuffing so I like to keep a quantity of it in the house for him. Making this according to the directions isn't something I've ever done so I can't really comment on that but I can say that with a quick few additions and substitutions, I can actually eat and enjoy this as well.

First, I always use stock (usually chicken/duck -- whatever I have in my freezer) instead of water and add some sort of vegetable to it as well. Usually it's sauteed, grated carrots or zucchini but I've put everything in it at one point or another. I also add to the seasoning with whatever I think will taste good (sage is always great as well as any sort of chicken seasoning and I always add parsley if I have it fresh on hand).

Here are some more suggestions to add to make your stuffing better that I've tried and liked:

-- Cooked sausage -- breakfast sausage is always good but I've used brats and italian sausage as well and it's equally as good.
-- Bacon
-- Chicken livers (or turkey or duck or whatever you might be cooking)
-- Ground beef
-- Or you could go the fruit way and add apple, dried cranberries, raisins or even substitute some of the water for cider
-- Nuts (chestnuts and walnuts are what I've used)
-- Veggies -- Like I said above, grated carrots or zucchini is my standby but I always add onions, garlic, and sometimes celery or mushrooms as well.
-- Cheese -- parmesan in particular

I also have a friend who swears by adding white rice to it as well but I haven't tried it (and personally think that that's an awful lot of carbs!

We made the chicken bake using the recipe on the box of stuffing. Great stuff. Stuffing has nice flavor and is easy to prepare. If you like to have "stuffing" with your every day chicken this is one way to do that without a lot of hassle. I suspend my inner critic's voice, open a jar of chicken gravy, roast my chicken breast, open a can of jellied cranberry sauce and have a delicious, easy to fix in minutes weeknight supper. I actually really enjoyed this. I usually try to eat very healthy, and while this is not normally on my list, it is better than the regular stuffing and good for when you're in a hurry! I mixed the Stove Top with a can of diced tomatoes (including the juice in the can) and a half a cup water in a mixing bowl, then in a 9x13 in dish, diced up 1 lb, of chicken, sprinkled with basil and skim milk mozzerella cheese, covered with the stuffing mixture, and baked at 400 for 30 minutes. It was easy and tasted great!

This mix makes an excellent side to virtually any protein. It's quick, fool-proof, and, with the addition of onion and celery and the herb of your choice, steps out from behind any sort of "boxed, store-bought" taste. I wouldn't consider my pantry well-stocked without it.

Brown pork chops nicely, finish them in the oven, lay them aslant on a serving of your augmented stuffing, make a "jus" of the dark pan drippings and drizzle it over the chops, and you have an easy dish fit for company (just make sure to not leave the empty box out on the counter while you accept your accolades).
