Book Description

August 17, 1999
The James Beard Award-winning authors of Entertaining 101 are back with another invaluable book for the modern, overextended cook.

Throughout history, one-pot cooking has been a practical and convivial way to share a meal. Now, at the dawn of the new century, one-dish dinners speak directly to busy lives and fulfill our desire to share a home-cooked meal with family and friends.

In Stylish One-Dish Dinners, award-winning authors Linda West Eckhardt and Katherine West DeFoyd provide the recipes for 100 delicious meals that are stir-fried, sautéed, roasted, or braised, cooked in the oven or on top of the stove, including not only traditional soups, stews, and chilies, but also noodle and rice dishes, eggs, salads, and pizzas. Poultry, meat, seafood, and vegetables star in such tempting culinary creations as Beer Braised Pork Chops with Onions, Apples, Cabbage, and Currants; Slow-Roasted Barbecued Brisket and Southwestern Vegetables; and Seafood Paella with Artichoke Hearts.

Each one-dish recipe is accompanied by a menu with side dishes and desserts that can be bought ready-made or quickly prepared; a beverage suggestion; and a mini cooking lesson involving a technique, a utensil, or an ingredient that the reader can then use to prepare a different recipe on another occasion. In short, the authors have thought of everything, thus liberating the busy cook from anxious speculation, the better to concentrate on the pleasures of sharing a worry-free meal.

Editorial Reviews

Amazon.com Review

In Stylish One-Dish Dinners, the mother-and-daughter team who wrote Entertaining 101 gives us more creative ways to please company. This time, they focus on homecooked dishes you can turn into complete meals by adding storebought side dishes and dessert. (In their usual thoroughly organized way, they suggest what these could be, along with the ideal wine to serve.) Ever practical, Eckhardt and DeFoyd include abundant tips, such as using a large skillet for stir-frys in place of a wok. At times the authors also let the cook figure out a detail or two. In their Thai Curried Salmon and Spinach Stir-Fry with Basil, it's up to you whether the frozen spinach should be defrosted and the salmon skinned (probably yes to both).

Mostly, they wow you with 101 dishes that have unexpected twists. For a formal party, try gin-marinated Martini Scallops served on a bed of spinach zested with orange. Steak lovers will delight in the hearty Roasted Vegetables with Sirloin of Beef, where the vegetables and meat are made in the same pan and then the meat is sliced and served with the vegetables. For a sauté with a twist, try the Turkey and Cranberry Couscous, using cooked turkey meat you purchase beforehand. Having Stylish One-Dish Dinners in your kitchen makes it easy to produce complete brunches and dinners with minimal effort that will also be enjoyable and entertaining for your guests. --Dana Jacobi

From Publishers Weekly

Cook in one pot, serve on one plate. Although it's hardly a new concept, cooks who are short on time but big on entertaining will savor the sophisticated simplicity of this latest entr?e from Eckhardt and DeFoyd, winners of a James Beard Award for their previous book, Entertaining 101. Borrowing from one-pot cooking traditions around the world, they offer recipes for dishes as diverse as Chinese-style Braised Bok Choy and Chicken in a Ginger Sauce, Italian-inspired Risotto with Apples and Sausage and even Real Texas Chili. Cooks should keep in mind, however, that cutting down on the cleanup by using only one pot doesn't necessarily reduce the time spent cookingAabout half the recipes require more than an hour of preparation and cooking time. Still, there are as many that take less than 30 minutes to make, and the authors offer advice on taking advantage of such time-cutting devices as the pressure cooker and microwave oven. Accompanying each recipe are tips on presenting the dish to make a singularly memorable meal. (Aug.)

5.0 out of 5 stars Stylish one-Dish Dinners - EASY!, March 18, 2000
This review is from: Stylish One-Dish Dinners: Stews, stir fry, family dinners, and entertaining friends (Hardcover)
What a great cookbook, I saw the author on TV, and was so impressed, that I immediately logged on amazon and ordered it. I have made about 8 dishes and my husband is so impressed. Better yet, I have two children (2 1/2 and 10 months) and this book and recipes have afforded me the extra time I need with them, while still providing our family with very YUMMY meals. I highly recommend this book!

I was lucky enough to attend a cooking demonstration/tasting conducted by the author and was thrilled to find a book that lives up to it's title! Not only are the recipes wonderfully flavorful, they are indeed stylish and EASY.

This review is from: Stylish One-Dish Dinners: Stews, stir fry, family dinners, and entertaining friends (Hardcover)
This cookbook is printed on recycled paper, there are no pictures and the print is very hard to read. I wish the author would reprint this cookbook with glossy pages, beautiful pictures and not have the ingredient list in all capital letters. The recipes in this book are excellent. They are one dish stews, stir-frys, etc. and there are serving suggestions with an appetizer, salad, dessert, and side for every recipe. It's just phenomenal. There are also wine and beer suggestions for those so interested.

The Braised Herbes de Provence Beef in Burgundy Wine was excellent. The suggested pairings were Pickled Beets and Toasted Walnuts in Vinaigrette as an appetizer. The side was Grilled Polenta Disks with Olive Oil and Red Pepper Flakes and hot baguette bread. The dessert was Perfectly Ripe Comice Pears and Blue Cheese with Port Wine. Wow...what a meal. There was even a quick serve suggestion of buying the pot boast already cooked from the meat department and adding the vegetables and wine. The suggested wine for the cooking and drinking was a Chateauneuf-du-Pape from the southern region of France.

The downside is the print is a dark red so it's hard to read, the ingredients are types in all capital letters on in a two column format whereas the instructions are printed in a single column format so you have to switch back and forth from reading across to reading down. It's quite bothersome when you have bifocals and do this over and over. The time tables and cooking times are written in light green print...it's eye strain to the max.

BUT...having said all that this cookbook is really worth it. Even 10 years later it still sells for top dollar so that's how you know a good cookbook. Another great cookbook using wine for cooking is The Gourmet's Guide to Cooking with Wine: How to Use Wine to Take Simple Recipes from Ordinary to Extraordinary.
