Mashed Cauliflower Perfect Pizza Dough Scottish Shortbread
Time Prep Time: 10 minutes Total Time: 10 minutes Yield: 6 servings (3 cups/750 ml) Prep Time: 10 minutes Total Time: 70 minutes (includes rising time) Yield: Dough for 2 pizzas (1 1/4 pounds/750 g each) Prep time: 10 minutes Total time 55 minutes Yield: 1 dozen (12 wedges)
Ingredients 1 head cauliflower, cored, trimmed and cut into small florets (about 6 cups/1.5 L) 1/2 cup (125 ml) sour cream 3 tablespoons (45 ml) finely grated Parmesan cheese 2 tablespoons (30 ml) butter, softened 1/2 teaspoon (2 ml) salt 1/4 teaspoon (1 ml) pepper 3 tablespoons (45 ml) chopped fresh chives 5 cups (1.25 L) all-purpose flour (approx.) 2 pkg (8 g each) rapid-rise yeast 2 teaspoons (10 ml) salt 2 cups (500 ml) very warm water (120° to 130°F/50° to 54°C) 1/4 cup (60 ml) olive oil 3/4 cup (175 ml) salted butter 1/4 cup (60 ml) superfine or berry sugar (approx.) 1/2 teaspoon (2 ml) vanilla 1 1/2 cups (375 ml) all-purpose flour
Instructions In large saucepan of boiling salted water, cook cauliflower for 6-8 minutes or until fork-tender. Drain well; return to pan set over low heat and cook, stirring, for about 2 minutes or until all moisture has evaporated. Using hand mixer on medium speed (using up and down and sideways motion), beat cauliflower until it is mashed and resembles mashed potatoes. Add sour cream, Parmesan, butter, salt and pepper; mix on medium-high speed for 2-3 minutes. Stir in chives. In stand mixer, stir together 4 1/2 cups (1.125 L) flour, yeast and salt. Add warm water and olive oil; using dough hook attachment, mix on low speed for about 4 minutes to make soft dough. Increase speed to medium; mix for 6-8 minutes, adding 1 tablespoon (15 ml) flour at a time (to maximum of remaining 1/2 cup/125 ml), until dough is smooth and elastic, and sides of bowl are clean and dough pulls away from side of bowl. Transfer to lightly floured surface and knead to form a smooth ball. Transfer to lightly greased large bowl; cover with plastic wrap. Let rise in warm place for about 1 hour or until doubled in bulk. Punch down dough; proceed with recipe as desired. Tip: Pat each ball of dough onto 15- x 11-inch (35 x 27 cm) baking sheet. Top with desired sauce and toppings. Bake in 425°F (220°C) oven for 15-18 minutes. Preheat oven to 325°F (160°C). In stand mixer, on medium speed, beat butter and 1/4 cup (60 ml) of the sugar for about 2 minutes or until light. Beat in vanilla until combined. Add all-purpose flour; beat on low speed just until mixture comes together. Pat dough into greased, parchment paper–lined round 8-inch (20 cm) cake pan. Use knife to score shortbread into 12 wedges; press around edges with fork. Refrigerate for 30 minutes. Sprinkle top with additional sugar (about 1 teaspoon/5 ml). Bake for 40 to 45 minutes or until light golden. Let cool in pan for 5 minutes. Cut through score lines; let cool completely.

I just bought this model for $59.00 at Ocean State Job Lot. I wanted to try it out a couple times before I wrote a review. I already own a Breadman Bread Maker (which I love for over 6 months now and it was the least expensive bread maker) so I really just needed a stand alone mixer vs. the hand mixer I have had for years. However, I first mixed a batch of bread dough, 4 cups of flour in size, and yes I had to help it with the spatula, no big deal, and it did wobble a bit on the stand. I noticed a little smoke, hardly noticeable, and if you read the instruction manual it says that this can occur when it is new and is perfectly normal. It sure beat mixing bread dough by hand! Today I made a large batch of oatmeal chocolate chip peanut butter cookies and it worked perfectly. Yes, I did have to scrape the sides along the way, but so what. No wobble. For $59.00 it is way better than holding a hand held mixer and trying to do it. Some people who had trouble with the bowl not turning I believe was because they had the lever in the wrong setting. There is a big and small bowl setting, and it makes a difference. The smaller bowl is a special order, which I think I will get for smaller needs, i.e. whipped cream. For the price it is perfect. If I was going to make large batches of bread dough this would not be enough of a machine, not because of power but because of the way it mixes compared to KitchenAid. But for a one loaf size or pizza dough it works fine. I will update more later with more use. If you read the reviews on the KitchenAid mixers you will find people who have defective machines and are unhappy, and at a price of over $300.00!

I really like this mixer and the power it has to mix anything I'm making. Many mixers bog down when mixing bread dough, not this mixer. It is a very good value for the money. I had considered another brand but am glad I went with the Sunbeam.

I had the sunbeam stand mixer #2395 and loved it. They discontinued this model and of course I dropped the glass bowl and couldn't replace it or the beaters. I have a christmas cookie business and really count on my mixer. So I took a chance and was very pleased. I also have the kitchenaid mixer and prefer the sunbeam.

I HAVE JUST USED MY NEW MIXER. IT WAS EASY TO ASSEMBLE AND PRACTICALLY RAN ITSELF, I USED A SPATULA SEVERAL TIMES, BUT IN COMPARESION TO OTHER STAND MIXERS I HAVE OWNED, IT OUTRANKS ALL OF THEM. THERE ARE SO MANY SPEEDS TO CHOOSE FROM AND IT RUNS VERY QUIETLY. I LOVE IT AND CANNOT WAIT TO USE THE DOUGH HOOKS.

I am so surprised that so many people do not like this. I bought this solely to make fondant. I got tired of kneading with my hands and getting really sticky so I wanted something to do it for me. I really, really wanted the Kitchen Aid mixer but I could not see myself spending over $200 for it. Anyway, this does the job. It mixes all my fondant ingredients well to the consistency I desire.I use the dough hooks to mix my fondant. It does not get stuck at all. I have had this for a month now and have used it several times. To make sure my ingredients are mixed, I alternate between the mixing of the inner and outer switch. Well worth the money!

Beaters began rusting after first washing. Sunbeam Customer Service said they would send replacements under warranty, but sent dough hooks by mistake. Called back, and had them send the correct part. A few weeks later, received replacement beaters: they are 3/4 of an inch shorter than the originals and won't mix contents in the bottom of the bowl. Called Customer Service again. Their response: "Sorry they don't work for you, but those are the only ones we have." After one washing, they're rusting, too. "Caveat emptor."
