For the person(s) who said they are chewy and soften up overnight, you just didn't cook them long enough. They should not be pliable at all after cooling. Just one like that in your storage container will cause the rest to soften. I had a few like that, and put them in a warm oven to heat up (the heat will soften them up first), and hopefully they will harden al ittle harder as they cool.
I also didn't have any fine or superfine sugar on hand, so I just put a cup of sugar in my Vitamix and pulsed twice (be careful - you'll make powdered sugar in an instant if you go longer). After Googling other recipes, I see many that actually call for powdered sugar, so maybe you could use that as well.
There is no shortage of "fortunes" online. You can find hundreds, and don't have to repeat any. I printed on an inexpensive glossy paper - I forgot the maker even came with paper. The paperwork doesn't tell you what it is or where to but it anyway, and the company (Sunbeam) is of no help since this product has been discontinued anf they no longer support it. I actually have another on order since I never want to be without this little appliance.
Yet, I tried over & over & only could form 1 fortune cookie! very frustrating! I consider myself not clumsy at all but after many tries, i still couldn't form the cookies even with help from the attached tools. I went on internet to see on Youtube how people make fortune cookies by hands but it didn't help.
The point is when the cookies are cooked (<2 minutes), it's quite crunchy so right when I put it on the mold & tried to bend it, it is broken!
So I tried it when it was cooked 1 minute or 1.3', it worked but it remains soft even I left it there for 30' & many more hours! They're the same as Pizzelles.
So i've to let it in the machine for almost 2' & as said, couldn't make fortune cookies!
I didn't return the machine as I hope maybe my neighbor who is very very skillful may be able to make some cookies & show me how. I gave the machine 4 stars because it works well & maybe it's just me, who can't make the cookies!
Update: I failed again 2 more times & so was my neighbor! I'd appreciate if someone who is successful can post their video of how they make those cookies (I know the commercial has a video but it didn't help me)
