This review is from: Superfiction, or The American Story Transformed: An Anthology (Paperback)
This is not the only selection of such stories and authors, but it is a good (if dated) one. I used some simpler selections from it when teaching English and Literature in China.

I particularly recommend Vonnegut's "Unready to Wear," Pynchon's "In Which Esther Gets a Nose Job," and Rascoe's "A Lot of Cowboys," although (as LeVar Burton might say) "You don't have to take my word for it."

Joe David Bellamy - Introduction
Kurt Vonnegut, Jr. - Unready to Wear
Robert Coover - The Elevator
Rudolph Wurlitzer - Quake
Ursule Molinaro - Chiaroscuro
Joyce Carol Oates - By the River
John Hawkes - The Universal Fears
Leonard Michaels - Manikin
Thomas Pynchon - In Which Esther Gets a Nose Job
John Gardner - Queen Louisa
William H. Gass - Order of Insects
Barton Midwood - One's Ship
Robley Wilson, Jr. - Saying Good-Bye to the President
John Barth - Life-Story
Donald Barthelme - Sentence
Gilbert Sorrentino - The Moon in Its Flight
Ronald Sukenick - What's Your Story
Ishmael Reed - The Loop Garoo Kid
Judith Rascoe - A Lot of Cowboys
John Batki - At the National Festival
John Updike - Under the Microscope(less)
