Good product but i do not recommend this for a restaurant.
Perfect product for the at home cook, beginner's sushi roll class, or a private sushi party.
Must break in the mat by rolling in hands back and forth before using.
Too flimsy for steaming monk fish liver, holding the shape of dashi maki tamago (while cooling), or for draining excess moisture (oroshi daikon).
Im still very happy with the product!
