The wonder veggie,

This is a wonderful, easy to read cookbook. The recipes are easy to follow and do not require long preparation time. My family loved the sweet potato cheesecake (pg 60). The author gives you lots of reasons to want to eat more sweet potatoes in the research section, which is also easy to understand. I hope a second edition is forthcoming!
