This is a great book. I have made several recipies from this and they all turn out great. There is also a lot of informations if you are just learning how to make sausage.

After reading most of the book and trying some of the sausage recipes I have the utmost respect for the knowledge and work of Rytek Kutus. I regard this as thee reference book for sausage makers, artisan, amateur and professional.

This book was recommended by a friend. We both have experience with smoking and curing meat. I found this book to be very informative. It had a great scientific background. Also, the sharing of techniques for smoking and curing meat was invaluable. I would recommend this book highly for anyone interested in smoking and curing meats. Kudos to this wonderful book.

About 18 months ago I started making sausage as a hobby, most of the tips and experience I gained on-line were helpful in the beginning.
I got to a point where I needed the input from someone with a lot of experience in the field, thus buying this book and reading the endless resources as well as informative chapters was what helped me learn a lot more.
This book is recommended to anyone who is either just starting out or even someone who has been making sausage for some time, even curing meat and smoking meat.
