Tanker Ops by Prof. Huber is a great primer for the uninitiated, and a good reference for those already in the industry. If you have the old edition, upgrade to Prof. Huber's work.

With a few changes to take into account the SI sytem and a section on global standards/practices (not just IMO, but perhaps some typical country specific information), it would make a excellant textbook in any country, due its uncomplicated language and straight forward approach.
