I purchased this book at a gift shop on St. Thomas and it was my favorite souvenir of the trip. Everything I've tried has been delicious and different. Truly if you can't find something wonderful to cook from this book, then you ought to order out. Cooking is not your thing.

If you love caribbean food or want to try to make those special dishes you had on vacation, this is the book for you. It breaks it down by meal type and also includes drinks and desserts!! I've tried many of the reciepes and they are outstanding. Easy to follow directions and endless treats to try, you will love it.
I first found it in St. Thomas and then ordered it for my mother in law and my own mother as well.

I've begun a new interest in Caribbean cooking and purchased several cookbooks recently from Amazon. This is one of them - and it's not very good. It's a mess, frankly. First of all, nothing irritates me more than paying money for a book that hasn't been proof-read. It's full of typos and more significantly, the recipes are incomplete!!! You better know what you're doing in the kitchen because alot is left out assuming you can read her mind or figure it out. Some recipes just abruptly end. And imagine printing a Banana Bread recipe and not listing bananas in the list of ingredients! I had to read the recipe 3 times to make sure I didn't overlook it. But, no - she didn't list bananas! HA! Also, as a novice to Caribbean cooking I have recently tried ox-tail at a Caribbean restaurant and it's listed in the other cookbooks I purchased; it's a typical Caribbean recipe but not listed in her book. The index is horrible. Instead of listing things by food name, or by category, she lists it by the NAME of the recipe. Why would you list plantains as 'fried plantains' and not just 'plantains'? Or, "Star Shrimp Pasta" instead of "pasta" or 'shrimp" as the category and under that the specific recipe....Also I don't care for her commentary about the history and life in the islands which sometimes seems inaccurate or not substantiated. I think she just sat on the beach and threw this together to make a quick buck in the airport gift shop after she made a couple of meals that friends enjoyed. No pictures are included either which would help and which were included in the other 2 bookbooks I do like: "Eat Caribbean" by Virginia Burke, and "The Real Taste of Jamaica" by Enid Donaldson. Those are excellent. Don't buy Taste of the Caribbean -it's a waste of money and frustrating reading. I don't trust the recipes to be accurate and don't want to waste my money on expensive ingredients.
