My favorite cookbook,

I am strictly a "western" cook and grew up eating a western diet. I wanted to try some vegetarian recipes for better health and found this cookbook in a used bookstore. These recipes are fantastic: simple, flavorful, and filling. This book has become a cornerstone of a much healthier diet for me and my family. The best part is that the author has a recipe for virtually every fresh vegetable that I either pull out of the garden or purchase from the farmer's market -- so I can eat delicious and healthy food seasonally. There are also recipes that work well with frozen and root vegetables so I can eat well all year. And who knew that making paneer cheese was so easy and inexpensive? In the year or more since I've owned this cookbook, it has easily become my favorite.
