Australian authors Jan Castorina and Dimitra Stais provide authentic dishes from Thailand, Vietnam, Laos, and Cambodia, along with dishes fusing Pacific Rim ingredients with those of other ethnic regions. Examples of these include couscous made with coconut cream and lemongrass and a chili and coriander tomato dip served with crudités. Some recipes are slimmed-down versions of Asian favorites, including oven-baked spring rolls. Most recipes are brief enough to tempt you to cook Southeast Asian dishes any day. Color photos add appeal and, occasionally, helpful technical guidance. This book gives good value for the money.

The authors present a wonderful set of recipes paired with step-by-step photos which will entice newcomers to the cuisines of this region.
