Grade 3-5-Under such headings as "Noodles," "Food for festivals," "The tea ceremony," etc., Japanese food and eating habits are succinctly presented. Useful charts and good-quality, full-color photographs are plentiful. The opening section on history is misleading due to its brevity, but can be overlooked as this is a book about food. Some not very delicious recipes are included. These contain caveats about various cooking methods (boiling, grilling, etc.), but oddly enough no caution about knives, which are used in every recipe. Illustrations are clear and well placed, though not all their captions are accurate. For example, the "heated table," known as a kotatsu, is for warming feet, not food. The section on how to use chopsticks is not very helpful, though the social prohibitions surrounding them are admirably detailed. Libraries possessing Lesley Downer's more cogent Japanese Food and Drink (Bookwright, 1988; o.p.) can pass this title by. A serviceable, stop-gap selection.
