Other than drinking it straight out of the can (which trust me, is easily do-able!), I have had one practical use for "A Taste of Thai" coconut milk - for making Madras soup. An east Indian dish, Madras soup (named after the town of Madras) is a combination of tomato juice, coconut milk, shredded coconut and various spices.I have been serving it hot on cold holidays and always get requests for the recipe. Getting "A Taste of Thai" sure beats cracking your own coconuts and getting the milk the hard way. No extra sweeteners are added - just the natural, subtle sweet goodness of coconut. My less than perfect rating is for the lack of a warning to shake before opening and stir well before pouring. The contents settle when sitting on a shelf, so the coconut "meat" portion which is much thicker, rests on the bottom while the thinner viscosity portion pours right out. If you don't stir it well or use the entire can in your recipe, the remaining portion will not be good for much and spoils within a few days of being opened.
