McClane is well known for his fish cookbooks and McClane's Standard Interna tional Pocket Encyclopedia of Fish & Seafood (Holt, 1990); as a long-time editor at Field & Stream as well, he seems eminently qualified to write about game cookery. However, this expensive, heavily illustrated work is disappointing. There are well-written readable introductions to each type of game, but the good "Cooking Notes" accompany only some of the entries. Many of the recipes are quite old fashioned and available in the few previously published cookbooks devoted to the subject; there are some more interesting ideas, but because of the new popularity of game, many recent American chefs' cookbooks offer just as diverse, though more limited, a sampling. Not an essential purchase.
