I have bought this in store and online. What I have noticed is that the cans with the black lid (shows "Thai Kitchen" in white writing on a black lid) behaves like coconut milk should when refrigerated - it separates the milk and the cream. The cans with a plain lid (the can color, not black and no writing) do not separate when refrigerated. For me, this is fine because I refrigerate the milk and then use to make coconut ice cream, so I actually don't want it to separate. But for coconut whipped cream, this separation is crucial. For my purposes, it doesn't matter either way, but if you must have the separated cream, I would buy in store and look for the black lids.

I used to love Thai Kitchen Coconut Milk and bought it by the case. But they clearly changed the product and ruined a good thing.

The old Thai Kitchen was thick and wonderful. It separated in my fridge and even on my kitchen counter if it was below 70 degrees or so. It whipped up into a lovely whipped cream.

This stuff has the consistency of skim milk. It doesn't separate or harden even in the fridge. It doesn't whip up like heavy cream. The flavor seems watered-down.

Apparently these folks never heard the adage, "if it ain't broke, don't fix it."

A quick check here at Amazon (or in your supermarket's Ethnic Food isles) will reveal many brands of coconut milk; you might not realize that these brands vary widely in the amount of coconut 'milk' they contain. Since the moisture content of freshly harvested coconut meat varies, producers add water to the pressings in order to standardize the product in the cans. Some brands add back much more water than others; Thai Kitchen is one of the better canners in this respect, and the pictures accompanying its product description include the 'Nutrition Facts' from the label. You can compare different brands by checking the amount of fat and protein contained in the same quantity of liquid; this might mean doing a bit of math, since 'serving size' is not consistent between brands. Lower-quality brands may report a larger serving size, attempting to disguise a more diluted product. Besides determining the true cost of what you're buying, picking a high quality, minimally-diluted product also ensures consistent results in your recipes, since coconut milk plays a dominant role in imparting taste, texture and aroma to food and drink recipes.

You might enjoy some of the recipes at the Thai Kitchen website; in those recipes calling for coconut milk, be certain to use a similar low-moisture product if you're using another brand. Finally -- yes, you can freeze leftover coconut milk; the tiny containers included in many plastic food storage sets are ideal for this. Freeze any leftover amount promptly, and it will be fine for a couple of months in your freezer...

EVERY can is severely damaged and dented. The box that they came is is perfect, which means they were dented before they left the warehouse. The cans of coconut milk I received are NOT the same as what is pictured in this ad! Incorrect product that is severely damaged!

I was worried after reading other reviews about receiving dented cans. I decided to take my chances for $1.77/can vs paying $2.50-$3 per can at my local grocery stores. I just received my shipment and inspected all the cans. Everything is perfect! No dents and far away expiration dates. This is the exact stuff that's available in the stores now. I feel that coconut is the healthiest and most delicious of all the dairy milks and vegan milks available. Coconut milk is high in healthy fats (eating fat does not make you fat) that provide long lasting energy. Coconut milk is sugar free - so it does not have the health risks associated with high sugar foods. Coconut milk is a whole food - meaning that the milk uses the interior meat of the coconut and does not use chemical additives or man-made flavors. I have switched off of dairy products completely and improved my health by using the amazing coconut in it's many forms - milk, oil, butter, and water.

Coconut milk is an excellent substitute for cow milk (dairy) and a healthier, more natural whole-food choice compared to processed nut milk (almond, cashew), seed milk (hemp, sunflower, etc) and grain milks (oat). Cow milk is allergic for many people and even in non-allergic people milk creates mucous and inflammation. Processed nut, seed and grain milks are essentially ground nuts/seeds/grain soaked in water and then strained of the solid parts. Much of the "milk" is then colored water and not the actual nutrients of the nuts, seeds and grains. This is why vitamins are often added afterwards - to make the nutrition label look more appealing to the consumer. Furthermore, chemical preservatives, gums, and flavors are added to give the "milk" a flavor and thickness that is less dull that cloudy water. Many people find these that these vegan "milks" cause digestive discomfort (gas, cramping, bloating), tiredness and sometimes diarrhea.

Why is coconut milk different? Coconut milk is a mix of the white meat from the interior of the coconut and water, blended together.
