My copy just arrived a few days ago. I've already made several of the recipes in this book and they have all turned out fantastically good. The instructions are clear, the photography is gorgeous, and if you have even a basic Asian pantry you'll be able to make most of the recipes. Don't wait -- grab your copy now because once the word gets out this book will be harder to find than scraps in the bottom of my bowl after I'm done eating these most excellent meals!

Many irritations with this book, its mostly empty space and lovely pictures. The recipes are not thoroughly explained to the point of being incorrect. My first experience cooking rice stick noodles followed the books instruction of "soaking in warm water for 10 minutes, then rinsing in cold and draining" This ruined a pound of noodles, as the first were inedible, and the second predominantly ineditable. The correct instructions should have been "pour boiling water on the noodles" not warm water

No substitutions are suggested, despite the difficulty of procuring some ingredients.
The book needs a new edition, with vastly more information. I would not recommend this book.

Vatcharin Bhumichitr is one of my favorite cookbook authors and I have several of his cookbooks. This Big Book of Noodles is well done as with all his cookbooks: Cooking instructions are clear and precise on most recipes and photos are appealing. While I am not an expert on the authenticity of all Asian noodle cooking, I do know a lot about cooking Chinese noodles. Therefore, I found the Chinese noodle recipes in this book are not as authentic as the author wrote about his native Thai and other Southeast Asian noodle recipes.

This book explains in good detail but simple too and has good recipes and many colorful pictures too. It's a must read for lovers of Asian food and their noodle dishes.
