KIMBERLY MATHAI, MS, RD, CDE, earned a master’s degree in integrative nutrition from Bastyr University and completed her clinical training at Tulane University. Kimberly is a national presenter on the topic of nutrition and cancer. She lives in Seattle.

i bought this book for my niece who had breast cancer and she is very pleased with it, I know she reads it all the time and was really happy to receive it. I had it sent to her so I haven't seen it but I know she enjoyed getting it. She has told lots of friends about it.

This is an amazing cookbook that has some great dishes you can fix for the whole family. You will be surprised at how tasty Kale is and the many ways there are for using Kale and other fresh veggies in your meals.

Since using this book, I have developed a greater appreciation of fresh veggies and proteins other than red meats.
