when this arrived. A *plastic* knife for cutting cheese? Give me a break! We eat a lot of extra sharp cheddar - hard to slice. A plastic knife will break - right? WRONG! This little gidget is terrific! Even with my seriously arthritic hands, I can slice my own cheese without it hurting my joints! This is the best invention since - well - sliced bread! when this arrived. A *plastic* knife for cutting cheese? Give me a break! We eat a lot of extra sharp cheddar - hard to slice. A plastic knife will break - right? WRONG! This little gidget is terrific! Even with my seriously arthritic hands, I can slice my own cheese without it hurting my joints! This is the best invention since - well - sliced bread! (Or should I say cheese!) It is worth every single penny. In fact, I'm ordering another one - just for me to use. Gonna put my name on it in permanent marker! Whoever invented this is a genious!

I used this knife today at my parents' house, and I will certainly be buying one for myself. Just like the description says, it sliced right through even sticky cheese without doing that annoying pulling-down thing that I'm used to (no specialized cheese-cutters in my house, just paring knives) -- you know, when you get about a centimeter into the cheese and it starts to crumble because the top part is being pulled down by the knife. It went through blue cheese, smoked gouda, and reduced-fat havarti with no trouble at all. Neat gizmo, if you enjoy cheese.

I read the reviews and saw the word plastic and was a bit sceptical....oh how wrong I was......This knife has been with me on numerous catering jobs and is so safe, I would let a child use it. The workmanship and design are first rate. I recommend this knife over any other for very soft to medium cheeses. The word PERFECT is not enough to explain the ease and user friendliness. Thank you Perfect plus!!

It's a funny design that does, indeed, achieve its intended purpose. It glides right through cheese that grabs and holds a standard knife, requiring very little pressure to slice right through.

The problem is that the blade isn't very stiff, so it bends and flexes while slicing through the cheese, making it impossible to get anything even *remotely* resembling an even, uniform slice. It may be a struggle to get a normal knife through the cheese, but at least the resulting cuts are straight.

Very disappointing.

you open the package, look at the knife and wonder - is this dull piece of plastic really going to work ?

then you put a piece of cheese on a plate, take the knife to it and - magic happens ! it chops cheese like it was a cucumber.

apparently the special shape and material are not a gimmick after all. this is a seriously engineered tool disguised as a bright color toy.

and to clean it ... well you don't really have to clean it at all because the cheese doesn't stick to it. i just rinse mine under hot water for about 3 seconds and that's it.

also regarding the reviewer who said get the larger version - i find this size perfect. i like how small it is. its big enough for most pieces of cheese yet small enough to be used on a regular plate instead of a cutting board.

this knife is perfection, seriously. i even like the handle although it could have been bigger.

After trying numerous slicers and knives, I finally came upon this one at a kitchen specialty store. The sales person raved about it and I thought I might as well try one more. This will definitely be the last one I buy! Having a husband from Holland, there is always cheese in the house. This knife cuts perfect slices, no matter the type of cheese. I'm so glad to have found it here on Amazon as I plan to order additional ones to give as gifts. You'd never know by looking at it how well it works, but it does!

For VERY soft cheeses, this knife is excellent. It does a good job of not sticking to the cheese as you cut down.

However, I cut a lot of slightly stiffer soft cheeses, which distort heavily with a my other cheese knife (and of course with a standard knife as well...).

This knife deflects side-to-side too much in these cheeses - eg it is tough to cut straight down through the block: the cutting edge wants to pop out toward the open face, and putting a little force (rotation) on the handle doesn't effectively counteract this tendency.

To a lesser extent, the tip of the knife also wants to eject, eg the near the handle I'm cutting a 1/4" slice, but towards the tip the slice thickness decreases & decreases as I cut down.

Why can't anyone make a perfect knife for this very specific need??? I do believe this knife would be perfect if it were metal or some sort of reinforced plastic.

I'm kind of a kitchen gadget collector, particularly knives. I've been experimenting with different knife styles for cutting various cheeses, and I'm particularly looking for a knife that will cut jack cheese without dragging. Cold "straight from the refrigerator" jack cheese is a challenge because it is both fairly stiff and clings to the the blade. I was looking for a good wire cheese cutter when I ran across "The Cheese Knife" and I couldn't resist. It works as intended, and is particularly good for softer cheeses like provolone or mozzarella. The company's demonstration video uses what appears to be a warm brick of cojack, and it does an impressive job of slicing any soft cheese, although careful technique is necessary to obtain uniformly thick slices. If you start at an angle, it does tend to continue on that angle. It will also cut stiffer (or colder) cheeses, but once a certain amount of pressure is required the blade begins to warp and the slices are not at all even. To be fair I have some of the same problem with thinner steel knives. For stiffer cheeses I find that my 7" Santoku gives a good balance between a thin enough blade to minimize drag and a stiff enough blade to give uniform slices. The manufacturer states that the knife was developed to slice Velveeta, and I expect that it does a superb job on something that soft. In all, it isn't going to be my primary cheese knife but it works great for soft and warm cheeses such as for an appetizer tray, and since it is plastic you don't have to worry about scratching the finish on the tray.
