With low-glycemic diets being the rage to lose weight and gain energy, I figured I would give the diet a try. This cookbook was the perfect kickstart because it is chock full of delicious low-glycemic meals using minimally processed fiber rich foods, healthy fats and lean proteins. Once my husband tasted the Chicken Tortilla Soup and said, "Divine, the best soup you've ever made," the Diabetes-Friendly Kitchen became my go to place for recipes. Seven days later and 5 pounds lighter, I am a convert. Jennifer Stack's recipes use flavor enhancement methods that take dishes to new heights, be it a healthier, tastier version of a standard like "turkey meatloaf" or the innovative "salmon and wild rice stuffed cabbage". The recipes are clear and easy. There are excellent sections on cooking techniques and making impromptu meals. I thought I knew my way around the kitchen until I read these! My only criticism is that the title of the book may lead people to believe that the cookbook is just for people managing diabetes. It is a collection of extraordinary recipes on the level of the "Silver Palate" series, all prescreened for more energetic, healthier living.

I love this book! If you're looking to find delicious meals to eat while struggling with the demands of being diabetic, look no further...this book is the real deal. You can kiss boring, bland food goodbye because this book delivers easy to follow recipes that will have your taste buds dazzling. I didn't think it was possible to eat food this good as a diabetic, boy was I wrong. Thanks Jennifer, this book is great.

No one in my family has diabetes, but I have been preparing food from this book because the recipes are easy, healthy and delicious. Stack offers suggestions for delicious combination of ingredients that I never would have tried. I am attempting to lose weight, while enjoying my food, and eating healthfully. DIABETES FRIENDLY KITCHEN serves all these purposes. And the instructions are beautifully illustrated with inviting photos of simple presentations I actually can recreate.

Most of the recipes were quick and easy and absolutely delicious. It's the first time I can actually say they don't seem like "diabetic" recipes. Just really, really good recipes!
