5.0 out of 5 stars Absolutely Wonderful August 12, 2012
By susanh
Format:Paperback
This may be my new favorite cookbook. My husband and I have tried three of the recipes: Fresh Corn, Zucchini, Onion, and Basil Frittata; Roasted Ratatouille Tart; and Walk-in-the-Woods Grilled Pizza. All three have been superb, and I have several others picked out to try soon. Middleton explains each step of the process very clearly. I had always wanted to try grilling a pizza, but I worried about doing it successfully. Her instructions were spot on, and the pizza was delicious. I can't wait to try more of these recipes.

4.0 out of 5 stars Buy the paperback, not the Kindle version May 2, 2013
Format:Paperback|Amazon Verified Purchase
The recipes are delicious, easy if you can follow directions. In the print book, some sections are in light green. In the Kindle version, these are very hard to read. The recipes come through clearly, though. But the other parts are interesting and I'd like them to be easier to read. The recipes are certainly worth trying for anyone wanting to feed their family more veggies. Lots of variety, lots of categories (pastas, salads, soups, eggs, stews, pizzas!), so something for everyone. A good way to ease into vegetarianism, or just eat more vegetables.

5.0 out of 5 stars Took me out of a veggie rut July 23, 2012
Format:Paperback|Amazon Verified Purchase
This book does a great job of breaking down all the different ways to cook vegetables. I usually roast all my veggies, but I am now loving cooking them stove top with different herbs and spices. A great way to add vegetables to your life in a delicious and satisfying way.

2.0 out of 5 stars Vegetable Recipes are not always healthy May 25, 2013
Format:Paperback
This recipe book, called the "Fresh & Green Table" proves the point that just because a recipe contains vegetables does not make it a healthy one. I was amazed to see that butter, cream, cheese, mayo and oils dominate the majority of these recipes. The pictures are beautiful, thanks to the photographer, and I'm sure many of the recipes are tasty (..what isn't tasty when it's pumped full of fat and oil?). The chef's intentions may be good, but don't be mislead into thinking that just because these are veggy recipes, they are necessarily healthy ones. They aren't.

5.0 out of 5 stars Beautiful! March 15, 2013
Format:Paperback|Amazon Verified Purchase
The photos are beautiful, the recipes are like nothing else I have found. This book shows how to make veggies as your main dish without a bunch of fancy ingredients that you will never use again. I'm going to love eating healthy!

The book is okay, but there are better ones out there. I prefer recipes that are not as time consuming or complicated.
