Editorial Reviews

From Booklist

Leading the charge into this year’s backyard barbecue season, Bon Appétit has gathered some of its best-regarded grilling recipes and put them in this single volume to create an inclusive resource for anyone with an outdoor fire alight. Beginning with the basics of fire preparation, the book offers considered advice on properly setting up a grill. But barbecue chefs being what they are, virtually every opinion here expressed can readily find its contrary defended by other equally devoted cooks. In conformance with Bon Appétit’s ever-professional approach, not only are basic meats and fish presented, but there are also myriad sauces, salsas, compotes, marinades, compound butters, and other garnishes that add visual allure and harmonizing flavors. Contemporary grilling is almost equally about vegetables, and the book’s vivid photographs pop their colors so intensely that these veggies can look as appealing as meats. --Mark Knoblauch

Just heard about this book on NPR, so I came home and ordered it. Arrived in 2 days and all this week all I've done is grill, grill, grill. So far I've made the Spicy Texas Drumsticks, the All-American Barbecued Chicken, the Yogurt-Marinated Chicken Breasts (our favorite so far), the Sweet and Spicy Shrimp, the Grilled Eggplant, and Grilled Zucchini. I've been grilling all this on a 22.5 inch Weber charcoal grill... nothing fancy. Can't wait to try a few of the pizza recipes. This is a great book... I just suggested to my daughter-in-law that she pick one up for my son for Father's Day.

This book reminds this reviewer of a tasty steak, thick, oozing with flavour (knowledge) and incredibly versatile. At this price it needs to be but often you do need to invest in quality.

Clearly there is never a shortage of books about grilling and BBQ cuisine, particularly after spring when people start to think of lazy summer days, entertaining and convivial times by the garden grill. Of course, many tend to forget the burned fingers, vegetables and carbon-laden meaty mistakes that may also come.

Maybe this book, billed as the "ultimate summertime grilling companion" can help, with its wealth of knowledge and tips, 350 different recipes and a fair bit of "lifestyle" imagery to help set the scene. This is a book you probably shouldn't buy blind. You really need to check out that you "get along" with it and to prepare yourself for being "seduced" by its wonderful goodness.

Getting cooking is the main focus of this book. The introduction and educational section was surprisingly short but to the point. You will pick up a lot more advanced knowledge and inspiration by reading through the various recipes, building up confidence, culinary desire and an expanded interest along the way. The recipes are held within chapters for chicken; burgers & dogs; beef; pork; lamb; fish; shellfish; vegetables; flatbreads & pizza; sides & salads; drinks and finally sauces.

It is a bit of a shame that not every recipe has its own photograph as the quality of the pictures is really top-notch. Each recipe is clearly written and easy-to-follow, but unfortunately there is no estimation of preparation and grill times and all measures are given solely in U.S. imperial units. There is a conversion table at the back of the book but it just feels a bit of a cop out doing that.

First cookbook I have ordered on a Kindle. I should have ordered the printed copy. I love Kindle for reading, but not for recipes.

I gave this book to my husband for our Anniversary. He is a Master griller, even built his own brick BBQ. He loves the book. Have been having so much fun with it! I am even making the Rootbeer Baked beans today. We both love grilling and cooking so this book is a great addition to our library of grilling. We also receive Bon Appitit magazine each month - love it! Thanks for all the fabulous tips and recipes.

I bought this cookbook as a gift for my girlfriend. She loves to grill and has lately felt like she was stagnating in her grilling. This cookbook contains many, many unique grilling recipes, and great advice on how to get the most out of your grilling experience. Since I bought her this cookbook it has been a mainstay in our kitchen. She loves it so much that she displays it on the counter while all the other cookbooks are away on the bookshelf.

I really like that this book contains practical advice for both propane and charcoal grills. This cookbook is great for anyone and everyone that likes to grill.

A wonderful beginners guide to the grill with a large collection of diverse, creative and delicious recipes. This book caters recipes to both gas and charcoal grills and includes recipes for many delectable side dishes and compliments to grilled fare. If you want to learn how to grill or need some culinary inspiration, I highly recommend this book!

I have this and the The Cook's Illustrated Guide To Grilling And Barbecue. I bought the Cook's Illustrated one first, then this one. If I had to pick one I'd go with The Grilling Book. I do like the Cook's Illustrated one, but when I'm not in the mood for a long explanation on why this or that did or didn't work and just want to grill some meat I turn to this book. The Grilling Book has helpful hints along the way, but not the volume long explanations of the Cook's Illustrated book. I've tried several different meats and sea food recipes from this book and all have turned out as described.

A great all-around grilling guide and collection of tested recipes for cooks who are looking to up their game at the grill. The recipes offer a nice balance of classics and contemporary, from America and around the world. Includes detailed instructions on how to prep meat (or vegetables, fruit, etc.) as well as a guide to setting up the grill. I hope to cook my way through the whole thing. While I've loved all the animal protein recipes I've tried, I've also was happy to discover Tuscan kale ceasar slaw and rhubarb salsa.
