Medearis hosts her own show, The Kitchen Diva!, which airs on hulu.com. I've been a fan of Angela Shelf Medearis since she came to a booksigning at the store that I managed at the time, with actual food made from recipes from her book The African-American Kitchen. Her Texas Caviar (a cold black-eyed-pea salad) was sooooo good. You could tell that her commitment to great food was so strong that she brought that food with her on the plane from her home in Texas.

Motivated by several members of her family diagnosed with diabetes, Medearis has created and re-created recipes that are healthy and sensitive to insulin imbalance. She shows you how to set up and stock a healthy kitchen including using sugar alternatives. Her cooking has always included the use of lots of fruits and vegetables and this book is no different. Also, the recipes are easy on the chef and the wallet. Nutritional information is included with every entry and there are beautiful color pictures throughout.

My favorites are the Seafood Burgers and the Veggie Lasagne. Part of the focus of the book is to make cooking at home easier and more fun, since it's harder to have control when dining out. While I didn't like that a lot of the recipes relied heavily on using the microwave, I still recommend it.

This is a cookbook that features dishes that everyone can enjoy even if you aren't diabetic. Angela Shelf Medearis, also known as THE KITCHEN DIVA! is a guest chef and recipe creator for the DR. OZ show. Her latest project is a cookbook that is geared to help cooks of all skill levels create fun, easy, budget-friendly meals that are diabetic friendly. Medearis has build a national reputation for her cooking, a style that blends traditional comfort foods and ethnic dishes but with a healthy twist. Since 20 million Americans are diabetic, this cookbook is certain have wide appeal. The recipes are accessible and, like the diva herself, sassy.
I spent a week testing this cookbook and eventually prepared six recipes. Since I am type 2, I had a special interest in this collection. I am pleased to report that every recipe I made was a success and, perhaps most important of all, delicious.
Micro-Wave Meat-Stuffed Peppers and Sweet and Sour Watermelon and Cucumber Salad were a snap to prepare. Fast Turkey Patties with Maple-Rosemary Sauce with Black-Eyed Peas Cakes were a perfect combination for a summer supper. My last two recipes were desserts. I chose a Pineapple Upside-Down Cake, a personal favorite, and Fudge Pudding Cake which is as delicious as the name sounds.
This is a cookbook that is highly recommended. Get a copy and let the fun meals begin!

The book was a gift for a friend who was newly diagnosed with diabetes. The first thing she had thought was that she couldn't eat anything with taste anymore. This book proved differently. It's got a lot of really great recipes that even non diabetics would like. I might try a few myself!

I am a diabetic and am allways looking for new idea's and things I can do with food. The book is written so easy to understand and what's great is the pic's of the family gatherings and the food so u know what your doing. I hope more people get this book because it's fabulous

Easy to follow and delicious recipies--not very educational re carbs. There are a variety of different types of recipies for standards as well as exotic foods.
