I am not skilled in the kitchen, and I always struggle with thinking up creative meals for Passover. Last year, my kids suffered with a week of "matzah pizza." However, this year is a completely different story! This book has been a life-saver! There are so many great recipes in here, and I plan to continue making many of these recipes even when Passover is over! Some of my favorites are: meatballs & "spaghetti" (with spaghetti squash), southwestern sweet & spicy meatballs, honey mustard schnitzel, carrot muffins, and mixed berry quinoa with roasted almonds. The best thing about these recipes is that they are very easy and quick to make! And they don't require a lot of fancy ingredients. This is perfect for someone like me who doesn't have hours to spend in the kitchen. The layout of this book is also beautiful. The pictures are great, and each recipe is exactly one page. Without a doubt, this is the most useful cookbook I have ever bought!

This cookbook is SO VIBRANT and colorful- I love it! I have bought a few as gifts for passover and I have been getting the best feedback- everyone is really into this book!!!

The No Potato Passover, by Aviva Kanoff is an exceptional cook book, in more ways than one.

It is not just a cookbook, but also a travelogue through cities and villages in Italy, through Croatia, Jamaica, New York, Czech Republic, Israel, Budapest, and several other locations, with accompanying photographs of both location and recipe accomplishment.

The recipes are delightful to look at in photograph form, and the recipes, themselves, are wonderful additions to the Passover celebration. I would make them year round, not just during Passover.

I tried three recipes, and was extremely happy with the results. So were my family members.

Baby Bok Choy with Garlic and Ginger came out fantastic.

I loved the Honey Mustard Poached Salmon.

The Chicken With Apricot Marmalade and Balsamic Vinegar Recipe came out divine. I thought I would never stop drooling.

I highly recommend this delightful cook book to everyone. It is not only a journey through cooking, but also a journey through inspiring and beautiful photography.
