I have both the old model of the Papered Chef mandoline as well as the new. The old one did not have the stand feature, which I quite like, but it DID slice and it sliced very well. This newer version is VERY safe. It also does not work. When I saw the springs on the side, I thought "Are we supposed to just push hard to activate this feature?" uh... yep! Ridiculous! The whole idea of using a Mandoline is to make slicing and dicing easier, not harder. The holder doesn't hold...well ANTHING really. I had an old Mandoline that I bought years ago for around 10 bucks. I bought it to make French Onion Soup. Somewhere along the way, I lost it. I would love to have that back. I own many Pampered Chef items, and I am a big fan. I got this new version because I threw a party, and I got it as a bonus. It does stay clean. Buuuut, that's because I can't use it for anything.

I was hopful, but found the safety feature of this mandolin made it nearly useless. I wanted to make french fries, but everthing has to fit it the little oval hole. Anyone want 2 inch fries with their burger? It's also hard to get the last of the item you are slicing sliced. I think you have to unprong it and hold the handle just right.

The ultimate mandoline is an ultimate failure in design. The "safety" feature makes this unit utterly useless. The problem is due to the fact that the mandoline slider has to be attached to the base at all times while using the blades. As the slider passes over the blade, it pushes down 2 spring loaded levers on each side of the blade. This raises the blade for cutting, but lowers it flush to the base when exposed. Due to this design, all items for slicing must fit inside the hole at the top of the slider which is far too small for most items. In other words, unless you are slicing cherry tomatoes, pearl onions, or other very small foods, you must first cut the it into smaller chunks. I do not recommend this item at all.

This mandoline is truly useless. As others have stated, the food needs to fit into the food holder in order for the safety feature of the mandoline to work. The food holder hole is a slanted oval measuring approximately 4" lengthwise and 3" wide. It is not big enough for half a regular-sized potato, tomato, bell pepper, onion, or any other round fruit or vegetable, so that's your first problem. The second problem is that the food needs to be held in by the pronged food holder, which also needs to be inserted into the slider. The food holder is approximately 2.5" deep/tall. So in order for this to work, your food item needs to be no bigger than 3" across and 2.5" tall. Since most foods you might want to slice are larger than that, you then need to cut the item small enough to fit into the food holder before you can slice it.

Now here's the thing. The main thing I'm looking for in a mandoline is something that is faster than using a knife. But by the time you've cut up the food enough times to fit in the mandoline, it's easier and faster to just continue slicing with the darned knife, and then you have one less thing to wash. Take zucchini for example. The instructions say to cut the zucchini into 2.5" lengths before using the mandoline. Well, if I'm already cutting the zucchini up that much before I even get it to the mandoline (which I then have to fit it in the hole, insert the prongs from the holder, and make sure the holder is fitted into the hole before I can even start slicing, which takes even more time), I might as well just keep cutting with the knife and be done with it. Additionally, you have to press down pretty hard on the food holder to get the slider to expose the blade, and the prong does have to go into the food, so it would be impossible to slice a strawberry without squishing it (although even if you could, it's still got prong holes in it), and the mandoline itself just sits there and laughs at soft cheese, so the reviewer who said that they use the mandoline to cut those must have some other product. Even the Pampered Chef manual states semi-firm or hard cheese.

I'm so disappointed in this and I feel like a fool for buying it. Plus, it's expensive, so while it would be equally as worthless at half the price, that's just icing on the cake. If you really are that prone to cutting your fingers while slicing fruits and vegetables, I highly recommend Pampered Chef's "Hold 'n Slice," which does the job fabulously for like four bucks. If you want to quickly slice food uniformly, find another mandoline.

As others have said, the item to be cut must fit in a little hole about 2"x3", and even then the holder won't let you push down enough to cut the last 1" or so of thickness.

This is one of those items you'd give zero stars to if Amazon permitted. And we got it free! Imagine if you'd paid for this turkey.

My wife purchased the Ultimate Mandoline for me. I do a lot of cooking and this seemed like a good idea......until I used it. The system looks clean and appears to be easy to use. I first attempted to cut potatoes with it. We wound up having really awful looking slices. It continuously jammed up. The base moved al over the counter. I tried to use it over a bowl, which was useless.

Next I tried to cut firm tomatoes. What I got instead was tomato mush. Onions were next (I wanted this thing to work.....I did not want my wife to be disappointed with her purchase). Needless to say I have gone back to knife. The previous negative reviews are pretty much on the mark. I contacted the rep that we purchased it from and she contacted P.C. and told her to have us send it back for a refund. They said they were coming out with an improved version....I think I will pass on it.

The first time I used this thing, I was in the ER a half hour later. If not for my thumbnail and the angle which I sliced myself, I would be missing a huge chunk out of my thumb too, luckily they were able to stitch the end of my thumb back on. This thing is just too dangerous to have in the house.

I purchased this a long time ago and kept bringing it out every so often to try to figure out why it wouldn't work! After reading the reviews I am furious that thing has such a stupid 'safety feature'! If you don't know how to use a knife you wouldn't have purchased this thing to begin with! Everything that you want to slice HAS TO fit into the small oval opening! Cannot believe this was even invented but really can't believe I paid so much money for it :(

I would just like to say that the previous review was correct in that, you do need to cut your food items to fit into the food guards proportions. However the four interchangeable blades, high quality, dishwasher safe, and finger and hand safe features make this mandoline the best one out on the market. Sure there are others out there that cost less, but this is the only one in which you can slice and shred quickly without losing any of your fingers or skin. Because the spring loaded blades will not work without the guard, there is no chance of putting your hands in contact with the blades at any time. Trust me you will like this feature. I know too many people who tried to use other mandolines, or even the Pampered Chef's older mandoline (this one is the newly redesigned one), and ended up cutting themselves instead of their food. (you can use your own imagination on that one.)

You can slice just about any foods with this tool, such as: firm tomatoes, onions, carrots, cucumbers, strawberries, green bell peppers, soft cheeses, and potatoes and so much more! Plus there is a grating feature for cheeses, and a non-skid foot easel for the counter top or table top. You can also click the easel flat to slice over a bowl or plate, and all four of the interchangeable blades fit into it's own little blade garage. It has a handle on the top for keeping your grip while in use, or hanging on the wall. It comes with full instructions, and even a recipe! The four blades are: straight edge, v-shaped, crinkle, and grater. This product also has a three year guarentee! The best for the money. Try it! you will love it too!

What a piece of garbage!
I had one of the old Pampered Chef slicers that worked great. But you had to be very careful not to slice your fingers.
I guess to prevent law suits some bozo came up with this system to keep the blade covered.
Problem is, you can't slice a large onion in it only small tomatoes.
You can't slice a medium size tomato in it; only small tomatoes.
You can't slice a large potatoe in it.
Very clumsy when slicing things like carrots.
