Terry Allen is funny and has depth,insight, can be searingly critical. But his beat is so infectious you can't stand still when you hear it.
I don't drink at all, never fooled around in honky tonks, but I know good lyrics when I hear them; this guy is one of Country Music's best kept secrets.

When it comes to consistency, Terry Allen comes to mind, or should, if you enjoy eclectic music. I have all his albums now, thanks to Amazon. Give him a listen, you may be surprised. d2iq

It's not pop, it's not rock, it's not for people who don't like to think, and ponder, and laugh, and drink, and drink some more. But if that's your thing, this might be for you.
