About the Author

Jessie Price grew up in a family full of great cooks and food fanatics. After graduating from Williams College, she cooked in restaurants in California and Colorado, including the Relais and Chateaux Home Ranch near Steamboat Springs. She started out testing and developing recipes for EatingWell and joined the editorial team full-time in 2004 when she moved from San Francisco. Jessie directs the food content for EatingWell Magazine and has worked on several EatingWell books including EatingWell Comfort Foods Made Healthy, EatingWell Healthy in a Hurry, EatingWell Serves Two, EatingWell 500-Calorie Dinners, The EatingWell Diet, EatingWell for a Healthy Heart, EatingWell on a Budget, The Simple Art of EatingWell and EatingWell One-Pot Meals. `Eating Well' claims to be, to healthy eating what Julia Child's `Mastering the Art of French Cooking' was to Americans in the 60's. That perhaps is a bit of an overstatement, especially since there are not the amount of techniques and help given, although for these simpler recipes there are many hints and help included; such as how to trim an artichoke.
There are numerous lovely pictures for most of the recipes, done so well they will definitely make you hungry. A list of menus is included, with page numbers for those recipes. The key to the icons is almost hidden with information in the back of the book. I can't imagine why you would not have a key in an obvious place in the front of the book.
There are several guides/charts with information such as; tables to steam vegetables, choosing ground meat. The shopping tips in many recipes are excellent. Most of these recipes are relatively simple even for a beginning cook, but will make dishes that even a more experienced one would be proud of. The shrimp and summer squash with saffron rice is wonderful.
Included is: how to eat well for life, appetizers and drinks, soups, salads, vegetables, grains and breads, sandwiches and burgers, pizza and pasta, vegetarian, fish and seafood, poultry, meat, desserts, cookies and bars, breakfast and brunch. Resources include, nutrition labels, tools and equipment, grilling times the healthy pantry, a glossary and substitution guide.

Those aiming to eat more healthy or who want better recipes with less fat and `unhealthy' ingredients might want to give this cookbook a try.

Just as with the other Eating Well cookbooks, this one is well thought out and includes lots of wonderful recipes. The thing I loved the most though, is how they give a basic recipe and then multiple variations. For example, there is a basic quick bread recipe and then 6 variations with different fruit and nut combinations. They also give charts on how long vegetables need to be steamed, roasted or sauteed accompanied by a list of different sauces. They leave it to you to decide which sauce would work on which vegetable.
All in all, a great value and a great addition to your cokbook collection.

Exactly as the name states, this book is full of simple recipes to allow one to eat healthily. I am a big fan of the magazine, so it makes sense that I would love the book. But it truly is a comprehensive, well-thought and laid-out book. My one and only complaint is that I like to have a photo of every recipe, and while there are many beautiful photos, not one for each recipe.

There are many quick tips and cooking techniques that will help novice and seasoned cooks alike. I consider myself somewhat of a "foodie", and experienced cook, but not a food snob. I like simple healthy ingredients, and these recipes center on exactly that. Seasonal is your best bargain, as you are eating foods at the time nature intends, and given their abundance, price is generally low as well.

The book contains lots of ideas for menu planning too. If you are looking for recipes that will allow you to eat good tasting, healthy food on a budget, this is the perfect place to start. I highly recommend.
