Recipes from the enthusiastic Alvaro Maccioni, who has been delighting Londoners for the last 20 or so years with robust Tuscan fare from the much loved La Familigia establishment in London's Chelsea. Italian food comes in many guises and the best-known dishes have been much replicated (not always successfully) many times over. This is really sound traditional Tuscan food (Maccioni is quick to point out the dishes from Tuscany are quite unique and should not be blanketed as 'Italian') - big soups for cold days, excellent omelettes, delicious lasagna. Maccioni's Pasta with Hare sauce is sensational, the Sage and Rosemary Bread truly great. There are also different and very good recipes for game, particularly the pheasant cooked in parchment. As a fabulous finale, puddings to definitely starve for. Italian dolci rarely use cream which is some justification for fantasy dreams of Moist Almond Cake or Peaches with Amaretto and Mascarpone.
